Pretty good! This restaurant is quite trendy, and the food is great. Sometimes ramen shops can be hit or miss, but this one is definitely a hit. The tonkatsu broth is nice and creamy, and pretty standard for its type of broth. The condiments were AMAZING though. The chasu pork is juicy and succulent, the ajitama eggs are soft and gooey, and it's always fun to find a naruto hidden in your bowl. The gyoza is also quite nice, more on the soft side than the crisp side, but it was still yummy, with a nice spicy pork.

You might read all that and say "wow that sounds great!" Why doesn't this place have more reviews? And that's a good question, one that I can't answer. When we went, we were the only customers there for an hour; not a single other person entered the store. The restaurant uses a kiosk system instead of a traditional waiting system, which is fine, but can be a little off-putting. The staff is there, and they're really nice, but there's this odd disconnect between the kiosks and service that doesn't seem necessary. The shop, at time of writing, also has basically NO online presence; no menu to look up in advance, no way to order online, no way to order takeout without actually entering the shop. It's just odd. It makes this place feel like some sort of hidden gem, even though logistically it's one of the standout restaurants on 7th St. on prime real-estate.

This place is nice, but it feels like they're missing their opportunity. I feel like there is a huge market for a trendy ramen shop like this if the restaurant is willing to be a little more personable with guests instead of relying on kiosks, and a little more forward-facing, with things like a website and an online menu. The menu has a variety of items. Many options of appetizers, sides, grilled items, Bento boxes boxes, ramen, udon and alcoholic and non alcoholic beverages. It is self service. This self ordering interface was easy to use. I knew what I was ordering and it included pictures. It was more convenient and than trying to remember what I wanted and explain that to a server, but a friendly server was available if I needed anything else. Service was great and quick. What I was most impressed with was the reasonable prices. I was able to try dango for the first time for only $2. We were excited about having dango. Tasted very good, almost like mochi consistency kinda sweet. They bring a glass bottle of water to the table. We ordered many items because we wanted to try several different options. I had lychee tea that was delicious !its topped with fresh lychee. The aji tempura (3 pieces of mackerel) it was my favorite. The tempura crispness and texture was perfect and the seasoning was great. We also ordered chicken karaage, yakitori wings, grilled chicken skewers, beef udon and grilled squid. I also enjoyed the different sauces that came with the food. The presentation is flawless. The restaurant offers an incredible dinning experience from start to finish. Arrived right when restaurant was opened. Staff was friendly and food was hot.

I ordered a tonkatsu bento. The katsu was tempura batter instead of panko, which was not what I expected, it was not stated on the menu that it was tempura style. Sweet sauce that was not tonkatsu sauce was poured on top before serving instead of on the side. The katsu was not flattened and not tendered (with mallet) before batter and frying, leaving it tough, thick, and difficult to bite. Knifes are not usually served with this dish.

Rice was slimy and sticky, I could only assume the rice was not washed before cooking. The extra starch was very obvious and it made both dishes less appealing.

The salad and egg omelette were nice and unique.

The tempura vegetables were missing tempura sauce which made them less than desirable.

My wife ordered a different bento box with a similar experience.

I didn’t have the courage to complain about these things to the staff. I would have to ask for an entire new dish and the rice would be same.

I feel bad for reviewing so harshly for a new restaurant. Even though this restaurant has great service and atmosphere, the food is so off, that I consider it one of my worse restaurant...

5 Stars Umami Japanese Bistro – Fort Worth, TX My son, granddaughter, and I had a fantastic dining experience at Umami Japanese Bistro in Fort Worth! The atmosphere was stylish and welcoming, and the service was friendly and attentive from start to finish. We ordered the Karashi Tonkotsu Ramen, and it was hands down one of the best bowls of ramen we've ever had. The chashu pork was melt-in-your-mouth tender, and the toppings — egg, bamboo shoot, wood ear mushroom, and green onion — added the perfect balance. For dessert, my granddaughter tried the Mango Mochi Ice Cream and Flan. Both were delicious, but the mochi was especially refreshing after the ramen. My granddaughter also enjoyed a Strawberry Ramune, while I sipped on a classic sweet tea — everything hit the spot. The service was exceptional — friendly, attentive, and knowledgeable about the menu. It’s clear this place takes pride in every detail, from the ingredients to the ambiance. I can’t say enough good things about Umami Bistro! From the moment I walked in, the atmosphere felt warm and inviting, with a modern yet cozy vibe. The staff was so attentive and welcoming, making the whole experience even better. Now, the highlight: the ramen. Hands down, the best ramen I’ve ever had. The broth was rich, flavorful, and perfectly balanced: savory with just the right depth of umami that keeps you going back for another spoonful. The noodles were fresh, springy, and cooked to perfection, while the toppings (tender pork, soft-boiled egg, crisp veggies) were thoughtfully prepared and absolutely delicious.
