Incredibly solid, under the radar breakfast joint. Recently visited for the first time post-pandemic; the food and service was as good as always. The mimosas are generously sized and have a proper champ-to-jugo ratio. My go-to is the mile high skillet, southern, add green Chile. This order ain't good for your long-term health or nothin--as it should--but this concoction is literally life or death for hangover 911. Used to be a regular haunt when I worked nearby so in all seriousness, I probably owe my job to this place. Whatever you're getting, do yourself a flavor and get at least a side of their green Chile (chefs kiss🤌)
Two critiques are the downsize of the mile-high skillet and lack of dedicated gluten free options. It's still a great value and solid portion but nonetheless a bummer. Good news is if you seek the former two-egged, terrible life choice-sized portion that few could accomplish in one sitting, you can still order it "grande" for a two buck upcharge. Trust me: you don't need it. A server told they had to discontinue their punchcard system for regulars due to some elderly folk abusing the system then becoming borderline violent so can only imagine how the downsize went over for some patrons...woof
A gluten-free pancake/waffle option would be appreciated but not worthy of any star dock. There are GF options on the menu but it's basically eggs/bacon/hashbrowns (all of which smack 👌). The green Chile is too good for me to even dare ask if GF, I'd rather not know.

Also, we have been trying to deliberately avoid chains (even though some newer chains offer great food!) and better support local restaurants. I liked Caitlin’s. I thought my breakfast was delicious. The staff were friendly and attentive. I found the restaurant charming. In a throwback to an earlier time, actual newspapers are set out for customers to read.
My wife, however, was a little less impressed. She probably won’t try it again for breakfast, although she might consider trying their lunch.
I ordered the “Bell” - an omelette with carne adovada, sausage, bacon bits, mushrooms, and cheddar and jack cheese, covered in a red sauce; I asked them to hold the ham and onions. My wife ordered the huevos rancheros with green chile. We both received generous portions of hash browns, and I ordered a side of bacon, too. The bacon was thick, chewy in the middle but crisp on the edges - in other words, it was nearly perfect. My omelette was good, too. The eggs seemed fresh and prepared just right. The omelette was huge, so stuffed with meats and cheese it was hard to finish. My red sauce was tangy, not hot. I added Cholula on top. My wife didn’t like her green chile. It tasted odd to her. She thought her dish was otherwise just okay. Her beans were whole, not refried, not her preference.

I love supporting local businesses and not restaurant chains. I ordered a side sample of green chili because the reviews raved about it. The green chili was good. It was garlicky. It had heat to it. I don't think it had pork in it. Pork would have added to the flavor. It was thick. I think it could have been hotter.
My usual test came with the biscuits and gravy. The biscuits were dense and the gravy was standard with no sausage. It was mostly cold. Meh. It was an attempt at least. Kudos for having it on themenu. I won't let an attempt at biscuits and gravy deter me from finishing my review. I got scrambled eggs and two thick strips of bacon to go along with it.
My companion had pumpkin spice pancakes, a blue plate special.
The staff was super nice and the conversations with people both sitting in the restaurant and who walked in the door, many locals obviously, and regulars, were filled with laughter and memories. I saw many to-go orders stream out of the kitchen.
