After Los Tapatios in Herriman I thought I was sold on Barria. Unfortunately, Quesabirria's fails to live up to the hype. Granted, this place feels very authentic so I might not be the target audience but here's my take as a American in his late 30's with an open mind.
Food: Meh. Without salt to enhance flavor, it's hard to say if the seasoning profile is on the mark or not. Salt packets are available but there's a big difference between salt added after the fact and Birria marinated in a salty consume.
Menu: this place serves tacos, fries, and ramen. No quesadillas, enchiladas, or burritos. Surprisingly limited.

I had to use what little bit of Spanish I did know to communicate with the cashier/server and that was okay for me as it was practice. The tables and seats could be cleaned more often and the bathrooms are more clean than the lobby area, but no biggie if short staffed. The consome wasn’t excessively greasy which is great!! Just the perfect amount for a good flavor. I got their quesabirria combo and it was perfectly filling. We also tried the charro beans and they were excellent!!
