The skin of the chicken is flavorful and perfectly spiced, and the yellow sauce that accompanies it (aji amarillo?) has a gentle bitterness that cuts through the fattiness of the delicious skin. I like that the exterior of the chicken has no burnt quality to it, and you can tell that great care went into regulating the cook of the meat because the chicken itself is really soft and juicy.
