The 1891 Steak house and Bistro — Restaurant in Hot Springs

My service was a little lacking BUT as I watched the server run table to table, I realized he was doing his best to stay on top of the tables he had and I kinda slipped through the cracks. I was there by myself and in no real hurry so I didn't mind much. I read the menu and saw the nearly $3 cost for a can of soda, I opted for iced tea in hopes of free refills.... I never got to ask for a refill (this is the area that I did mind slipping through the cracks with service). My food order was great! I got the pork loin with peach and it was great! The two sides I got were corn and coleslaw. The corn was a bit on the dry side but still flavorful, the coleslaw was perfect! While I had a couple of hiccups with my visit, I will definitely try them again the next time I pass...

Food was good! But not much for potatoes. Got a child size portion of cut fries to go with the Rib Eye Steak, and a portoin of smashed potato with the Smoked Pork Loin that felt like half a small baked potato. But we left full! The smoked pork loin was good, but supposed to be marinated with Peach Bourbon or have a Peach Bourbon sauce. No hint of that on the loin, but was not dry. Steak you could cut with a fork and good flavor. Appetizer of Artichoke Dip was also good! Waiter was very prompt and observed when we needed a drink refill. Food came pretty fast, considering it was a sit-down and relax kind of place. We would go there...

So I don't know if it was an off night or what but here is my experience: My wife's steak and my salmon both came out undercooked. I ended up sending my salmon back twice. Even then the center still wasn't cooked. My wife, well it was steak tbh as long as its warm, right? A smashed potato is literally that... a baked potato they smashed, and not some play on mashed potatoes. I would recommend getting a baked potato. The flavors were great, the service was awesome. With both proteins being so under cooked I can't give it any higher then a 3 star, especially...
