I don’t eat out at nice places very often, so when I do, I really want it to be worth it—and Jaxon Texas Kitchen at the Toyota Music Factory absolutely was. We started with the ceviche, and it was hands-down one of the freshest appetizers I’ve had in a long time. The fish tasted super clean, and the combo of tomato, lime, avocado, and cilantro gave it such a bright, fresh flavor. The Leche de Tigre added a citrusy kick that really brought it all together. I honestly could have eaten a whole bowl of it myself. I also got the Jaxon Greens Salad, and wow—it was way more exciting than your typical salad. The greens were really fresh, and the bleu cheese vinaigrette was rich but not too heavy. I loved the pickled shallots and blistered tomatoes for a little tang and sweetness, but the real standout was the beef tallow croutons—crispy, flavorful, and totally worth mentioning. For the main dish, I had the wood-grilled salmon, and it was cooked perfectly. Crispy on the outside, tender on the inside. It came with bucatini pasta that had a light lemony flavor and these buttery, crunchy breadcrumbs that added just the right amount of texture. There were also fresh pea shoots and caper berries, which gave everything a bright, slightly briny finish. It was a really well-balanced dish—rich, but not too heavy. The staff was friendly and checked in just the right amount without hovering. Everything came out at a good pace, and you could tell they actually care about the food and the experience. Read moreI went through several emotions here. First, it's the new kid on the block, so expectations were pretty high. The place next door, a barbecue spot... adds mustard to their bbq sandwich. Im not talking about as a binder but its part of the gadamn sandwich. I was hoping this place would contrast ... it didn't.
We were served water almost instantly. However, it tasted bad. I couldn't tell if the glass wasn't cleaned properly or their tap just tastes like that. I took a sip and pushed it aside. I felt like if I drank it all, I'd get sick. A shocking plus is that their drinks are reasonably priced. I was expecting $16 avg per drink but it's $12-14. We were served a drink and it tasted pretty good. After our drink was served, we noticed the bartender get a little busy but then things subdued. There were 3 tables in the dining area waiting to be served. So, I was considerate of that. However, things subdued and the bartender didn't seem enthusiastic about taking our order. We mustve waited 30 mins from the time our drink was served to when we were finally asked "what else can I get you guys?" We both ordered the hamburger and were quite disappointed. It was like a high end middle school patty. First, it had no char to it. It almost felt like it was steamed. It had an odd taste to it which I felt was my fault for ordering it with the onion jam it came with. After 3 more bites, I realized that I was wrong. It wasn't the onions.
