Coming from Utah, we have access to some pretty good Mexican food. After reading the reviews extensively, we knew to expect that this place was a bit of a dive with some staffing issues that served excellent Mexican food and that is exactly what we got. As best we could tell, there was only one server (who was also hostess and cashier) but she kept up pretty well.
After a bit of a wait, my wife and I ordered the enchilada trio to try the different sauces and their version of taquitos/rolled tacos (I can't remember the name, but they were the last option under tacos). The chicken inside was tender, shredded breast meat and was perfect, not being over seasoned. The only thing I would recommend is to have them not include the lettuce as they put it on top and it was a bit wilty due to the heat of the tacos. They included the same chicken in two of the 3 enchiladas on the trio and shredded beef in the mole enchilada and that was also very good. It is a chocolate mole and may be a bit of an acquired taste, but was good for the amount included i.e. I wouldn't want a whole entree covered in it, as it is a bit rich.
On to the things that they did well (that all Mexican restaurants should do well): My daughter got the beef enchilada (again with a name I cannot remember) but had them sub the beef for cheese. Although it was odd to me that they didn't already have an offering of cheese enchiladas on the menu, they did this one up right by bringing three of them slathered in their enchilada sauce, which is some of the best enchilada sauce I have had in a restaurant. Their rice and beans were also excellent, both being perfectly seasoned. Many have mentioned the chips and salsa and, although they are good, we wouldn't have been too keen on paying $2.50 for a second round except that my son doesn't like Mexican food, but will eat chips & salsa. He got the fried turkey hot dogs & fries from the kids menu and liked that pretty well. Overall, their excellent food was good enough to overcome their staffing flaws.
Last tip: They have bottled soda as well as fountain soda, so be sure to specify which you want when ordering. They defaulted to bottled (at $3 a bottle) when I asked for Fanta Orange, even though they had it in...

The place was only maybe 1/3 of the way full but we were still told we had to wait 10 minutes to be seated for some reason. There were only 2 of us. From what I could tell it could be because they're understaffed. Only one waitress for the whole place. My boyfriend got his beer out after 5 minutes or so, but I didn't get my margarita until 10 minutes later. Food took an equally long time to come out and our chips and salsa weren't refilled once we finished them. Rice and beans were bland and not worth eating and California burrito was not good. The cheese in it was shredded cheese from a bag and wasn't even melted. Found a couple bone chips in the pork fajitas. Read moreThe food here is absolutely amazing. My only complaint is that they are never open! The last 3 times we have come (at around 1 PM) they've been closed. We went today at 12:30 and a sign on the door read, "La Fiesta will open at 1:00 PM." We saw 4 big families walk up, read the sign and leave. We decided to wait there for half an hour. At 1 PM someone inside took the sign down and put it back up with the opening time changed to 2 PM. So frustrating!!!
