
So we researched this place before we even flew into Wyoming. Super excited to try the game meats and appetizers. The place was clean, western and there's something to look at on every wall. Taxidermy and photos you wish you could stop and look at them all for ages. The staff was friendly. We started off with the bison carpaccio (?), which was delicious, but 3 pieces was definitely not enough for 2 people. Not even sure 100 pieces would have been. I highly recommend this appetizer. And suggest ordering 2. I got the elk pops with a huckleberry reduction, carrots and polenta. It was delicious. The elk is cooked perfectly and huckleberry was more sweet, less tart than I imagined. I wish there was a little more carrot though. 3 sticks was ok but not really what I expected. My boyfriend got the game platter. Bison rib eye, elk filet, and venison bratwurst with mashed potatoes. The ribeye was fantastic. And the elk filet was cooked to perfection. The venison brawt was dry but not so much that we regretted ordering it.
The real reason they get 3 stars is for the waiter. He was polite, but slow. We finished our appetizers and stacked the plates up nice and easy so they could get picked up and we'd have more room. It wasn't until our main course arrived and we started eating that that they got picked up. (You can see them on the right of one of the pictures I posted of our main meals). Then when we finished our drinks they didn't get refilled til we were done. Then we were done with our meal we stacked everything nicely so its easy to grab and had our card waiting to show we were ready to pay. He made eye contact several times but never came back over. The manager lady, who was super nice, noticed and came from behind us and told us that he would be right over to help us. We don't complain to management unless something is really wrong. We both worked food service for years. And we didn't say anything to her. Just thanked her, got the check, paid, and left. We did tip, but not our usual 20%. Service was definitely disappointing. Maybe he was new, maybe having a bad day, I don't know. But we canceled our Valentines Day reservation with them because of this. It was good, but expensive for what it was and that the service left much to be desired.

We came to this place by recommendation of someone in town because we wanted to try good steak.
The Ambiance: The restaurant itself is cool inside- it’s filled with taxidermy animals of all kinds but if I’m really honest, it screamed theme park.
The Food: we ordered the Bone Marrow as an Appetizer, the Steak Diane and the Bison Ribs as main entrees. I was not impressed by any of them. Let’s start with the bone marrow- if you are unfortunate enough to end up here like me, please DO NOT ORDER THIS APPETIZER. It’s $22 for a tablespoon (at the most) of bone marrow and 4 crackers. You don’t even get a full bone, you get half of a bone. The steak Diane was well cooked and I got the corn on the cob as a side but it was TINY! My other half ordered the Bison ribs with the garlic mashed potatoes. The Bison ribs were big but taste wise- meh, whatever! I honestly think people order these ribs because it looks like a giant bone from the Flinstones. It looks impressive but the taste is lackluster.
It is sad when you go to a Steak place and the shinning moment is the garlic mashed potatoes.
Also, beware of anything the waiters offer you because unlike good servers (who are looking out for a great experience for their guests) the servers here seem to be busy upselling you on EVERYTHING. I watched his demeanor closely. He recommended the bone marrow and after he brought it out he didn’t even ask how it was because he KNEW it was trash.
Drinking Water was disgusting tap water. I’m sorry but if your average dish is $50+ the least you could do is offer filtered water for your guests.
Service: Our waiter was polite and answered our questions but I don’t believe he was very honest or genuine. He recommended the dishes we ordered but didn’t warn us about portion size or any additional charges. He offered us bread but didn’t say that it would be an additional $8. I wouldn’t mind paying extra if the bread was actually good. He sold it as “Freshly made Focaccia bread”… I get better bread at my local grocery store. Their “fresh bread” was oily and it wasn’t even warm?!?!!!

While it was cooked to perfection, I found it slightly overseasoned, particularly with salt. Perhaps a lighter hand on the seasoning would elevate this dish to perfection.
