Although I’ll be leaving a separate review for the hotel itself, I felt compelled to dedicate this one exclusively to our dinner last night at Matador Room, because it truly turned around our entire experience in Miami. In a city overflowing with trendy dining spots, it’s rare to find a restaurant that delivers not only in flavor but in soul — and that’s exactly what we found here.
From the moment we arrived, we were met with warmth. Everyone, from the host to the bus staff, wore genuine smiles and carried themselves with grace and professionalism. We asked to be seated outside on the patio, and without hesitation, we were led to a beautifully arranged table with just the right ambiance. It was clear from the start that the staff was there to ensure we had not just a meal, but a memorable evening.
Our waitress was attentive, knowledgeable, and kind — the kind of service that immediately makes you feel taken care of. She offered thoughtful recommendations, and we took her advice on several appetizers. The Hamachi, strawberry salad, mushrooms, tuna tartar and croquetas arrived one by one, each more impressive than the last. The croquetas, in particular, were a standout — impossibly light, packed with flavor, and paired with a sauce that was rich yet balanced. They melted the moment they touched your tongue — a small dish that left a big impression.
For the main course, since we were a party of five, we went for a tapas-style experience, sharing a variety of dishes so everyone could taste a bit of everything. The lobster, arroz con pollo, crispy onion short rib tacos, and truffle pizza each brought something unique to the table. Every bite felt curated and intentional, but it was the tacos and the fontina cheese pizza that truly stole the show — layers of flavor, texture, and unexpected brightness. I chose a glass of Sancerre to accompany the meal, and it paired perfectly across the board — crisp, elegant, and refreshing.
But as incredible as the food was, it’s the service that made this dinner unforgettable.
There is a palpable energy in Matador Room — a sense of cohesion and pride that you don’t often see in large hotel restaurants. That feeling, I quickly realized, stems from the leadership.
I had the opportunity to meet the manager, Paula, and the moment I saw her interacting with the staff and guests, I understood why everything felt so elevated. She leads by example — carrying plates, checking on tables, guiding her team with presence and grace. Her team moved in sync, with intention and joy, and it was beautiful to witness. Her leadership is the heartbeat of that restaurant, and it shows in every detail.
We were also celebrating a birthday, and Paula made sure it felt special. She sent Francesco, who brought out the dessert and offered the most delightful explanation of how to enjoy each component. There was a sweet-salty nut covered in chocolate, a delicate tart topped with an edible flower, and even a small liqueur — all curated with thought and care. Francesco didn’t just drop off a dessert; he guided us through an experience. His passion for hospitality was evident in the way he described each bite, encouraging us to slow down and savor it all.
Matador Room isn’t just another restaurant in Miami — it’s a gem that outshines even the most hyped-up spots in the city. Yes, the food is extraordinary. Yes, the drinks are thoughtfully selected and beautifully served. But more than that, there is heart here. There is pride in the work. There is a team that truly wants you to have a beautiful night.

This past Friday, I hosted my best friend's birthday dinner here. We made the rsv about 2 weeks in advance for roughly 11ppl. First and foremost, at NO POINT was I ever asked "would you prefer indoor or outdoor". This is Miami and last Friday when our party arrived, to my surprise we were sat outdoor, where given the heat and humidity it felt like 100 degrees at night! The birthday girl didn't want to make a big deal so I let it go at the time, however who wants to plan an evening out on the town and start it off COVERED IN SWEAT!!! Not to mention, I have eczema so thanks to accommodations my skin was on fire. Next, our waiter was in THEE worst mood. I've actually had him as a server before, yet never experienced his disgruntled attitude. Our rsv was for 8pm, we later had 10pm rsv downstairs @ the bowling alley. At 9:45pm, I realized we would be a little late and directly asked the on duty mgr (a short lady) to please call downstairs & advise as well as confirm that if we arrived at 10:30pm our rsv would be fine......She returned and advised the restaurant had let them know, I assumed that meant we were good. We then requested (also from the mgr) that the birthday dessert come out (something that I had discussed with them, upon the making of the rsv, upon arrival & again at 9:45) that took about 30min for them to bring out. We quickly ate it, paid our bill and headed to the bowling alley downstairs......ONLY to find out NO1 from Matador had called the bowling alley and they had sold our reserved table.........
Luckily the mgr's at the bowling alley, quickly came up with an alternative and made sure our night was great. They were able to get us a section to bowl, comped 1hour & allowed our entire party to ice skate for free.
