We have tried to eat here several times, but there has always been an excessive wait (2 hours each time!). With no reservation or online wait-list option, driving all the way from Navarre to then wait 2 hours was not something we would consider. Yesterday, we decided to try again, since the tourists are mostly gone and schools are back in session, and we were able to walk right in and be seated! Finally, FINALLY, we could dine here! Now, I understand that QR codes for menus is "the thing" nowadays, but that is VERY inconvenient for a family of 5, in which not every single one of us has their own phone. We had to pass the 2 adult phones around so the kids could view the menu and make their decisions, too. Again, I get it, but would it be too hard to have some paper options, especially for kids? Moving on to the goods: First up, drinks. We had a caramel latte, which was as good should be expected, but nothing extraordinary. We also ordered a Bonbom, which WAS something unique we hadn't had before, and it was very good. Now, on to the food! The menu is pretty extensive with a lot of delicious sounding plates, and we tried a bit of everything. The Croissant Melty Ham and Cheese, while tasty, was nothing special. I've had similar croissants at many other places, but I was really hoping for more here at Bistrology. The Pancake Berry Melt was ginormous, as expected, but lacked enough berry sauce to satisfy ALL of the pancakes; and said berry sauce was also COLD. Not room temp, but cold. That was off, for us. The bacon and cheese scramble was one of the family favorites as far as taste goes, but again, nothing too special, aside from pretty plating. The other semi-hit for us was the Omelet Diego Rivera that my husband ordered. The chorizo tasted house-made and was very good. The steak, however, was very under-seasoned, though I suppose for some that wouldn't be a bad thing. The last item we tasted was the Pancake Fruitfull Nutella. It was ginormous and sweet, as expected, but aside from the pretty plating, nothing fantastic. Most of the meals were served with potatoes, which were very bland, barely warm and honestly, just a filler for the plate. Overall, the best thing about any of the dishes was the plating. We were all disappointed in the flavors, though, especially considering the higher price point. Our waitress was nice enough, but just barely. The service here reminded me of various places in Europe; not very friendly, but also not rushing the customer. Just meh. The ambiance is the true highlight of Bistrology, in my opinion. The decor, the music, the entire vibe is really spot on. I just wish the food was as pleasing. The bill for the 5 of us with only 3 coffee drinks and the rest water (not bottled) was over $140 WITH a generous military discount applied. We are no strangers to throwing down some cash when we eat at certain places, but spending that kind of money and walking out far less than pleased is a major bummer. We are glad that we didn't wait 2 hours for this experience; but even without a wait, we won't be back again. Everyone seems to...

This spot is clearly popular, so we came in expecting a great meal — and while the food had some highlights, the experience overall was frustrating and poorly managed.
Hostess Stand Experience: The front-of-house operation needs urgent attention. We waited 20 minutes just to get on the waitlist, and during that time, the hostess repeatedly ignored guests. She didn’t acknowledge those who approached the stand, didn’t look up or speak, and generally acted as if we were invisible.
Several parties ahead of us left after failing to get on the list — not because they were impatient, but because they were completely disregarded. When we finally stepped up, she still didn’t acknowledge us. My wife asked about the wait, and again — no response. A server (with a name tag identifying her as such) finally came over, noticed what was happening, and added us to the list herself. Her facial expression and comment (“I don’t know what she’s doing”) made it clear that this is not a one-off issue.
If the hostess is a fill-in, that’s one thing but if she’s regularly assigned to this role, it may be time to reassess that fit. This position is the guest’s first impression of your restaurant, and right now, that impression is not a good one.
Patio & Service: The patio, though charming, was unbearably hot due to broken fans. This is Florida — airflow is not optional. Once seated, service was slow and disorganized. Our food arrived before our utensils, which took about 10 minutes to be delivered. Communication between servers seemed lacking, and the overall flow just felt off.
Food: Food quality was mixed for our group. Highlights and ratings: • Pork Belly Toast – 8/10 • Steak and Shine – 7/10 • Pistachio Waffle – 7/10 • Chicken and Waffles – 6/10 • Stuffed Croissant (Ham/Cheese) – 5/10
Portions were enormous — too much for most people at our table to finish, and we noticed similar leftovers on surrounding tables. Presentation was strong, though, and it’s clear the kitchen puts thought into how the plates look.
Overall: This could’ve been a great experience, but it was undermined by poor front-of-house management and uncomfortable patio conditions. The food shows promise, and the restaurant is obviously doing something right to attract such a crowd. But a long wait doesn’t have to mean a bad experience. Please consider tightening up your guest service, especially at the door — it sets the tone for everything...
Read moreI read all the reviews and decided this place was worth a try. Went here with my husband for breakfast at 1030am. Our waitress seemed to have a little attitude from the start. Food was good. But we weren't all that impressed. The portions were big. Prices are comparable to this area. I asked my waitress for a cup of just regular coffee which she brought to me. I didn't want any of the sweet, fancy coffees with my breakfast. After finishing my first cup I asked her for another cup. She told me they don't do refills.. I wasn't rude at all but I just expressed that it would have been nice to have known that u have to pay for a regular cup of coffee each time. When I said that she gave me a dirty look. Walked away without saying anything. Walked over to her co-workers and said something. They all looked over at me.. seriously! I've been in this business for 25+ years and I would never treat a customer that way.. I would have said, I'm sorry I didn't tell u and I would have went and got another cup of coffee and not charged for it.. and if the issue was out of my ability to make the customer happy, I would go to the manager and tell them the situation and ask to take care of the customer. And in all honesty I didn't need to have another cup, it wasn't even that big of a deal. I only told the waitress it would have been nice to know. But since almost every single place gives refills in regular coffee, I would mention that to each of my customers so they would know up front. I know there aren't refills on cappuccino and espressos but always on regular coffee... anyways, once I had said that to her, she never came back to the table to ask if we needed anything. Didn't refill our waters. When she did come back over she asked my husband if he was ready for the check and never once made eye contact with me again! Not impressed with these young, privileged kids these days.. if I had been rude, ok.. but I just commented in a nice way that I wish I would have known that. I don't usually write bad reviews. I always try to give a restaurant a second chance, but I won't be back here. It may seem petty, but I like good and friendly service when I go out. And I always way over tip when I get...
