TL;DR: Great food (it's Dan Kluger, duh), iffy service, major operational issues.
The good:
Local Sea Bream: Fresh and delicious
Diver Scallops: Perfectly cooked and delightfully sauced
Yuzu Layer Cake: Big, refreshing, tasty
The meh:
Beet mocktail: Overly bitter due to the lime slice, and impossible to drink due to the long rectangle of ice that hits your nose every time you try to sip. Just serve it with ice cubes, guys.
The bad:
The front door: As others have noted, it's massive and way too heavy. I power lift--it wasn't hard for me to open, but it would definitely be hard for some weaker or someone trying to open it against strong winds.
The high-top tables right in front of the door: Don't seat people here, especially on a windy day. Every time the door opened, it blew a huge gust against us and sent the menus flying across the room. This happened at least 6 times before we were finally allowed to change tables.
The service: I had to ask three times to move away from the high-top described above before we were finally allowed to move. The restaurant was 90% empty including the entire high-top section (we had arrived right at opening at 5:30pm), yet our server kept saying he had to check with the manager or something incomprehensible like that. It took at least 25 minutes for us to finally be able to move, and by then, my hair looked like I'd just gotten a blowout...

AND...yes, the food IS absolutely beautiful and delicious. Our server, Josh just so happens to be an aspiring dancer. My husband, Brandt and our friend Michael were both original cast members of A Chorus Line in town for the 50th Anniversary Celebration of ACL's opening night. It was great for them to encourage Josh in his career. However, he's doing an amazing job in the hospitality industry, as well. We were attended by two other servers and they were all professional, gracious and charming. We are both originally from Mississippi and the other couple live in Texas. The preparation and presentation of the food says Fine Dining but the flavor combinations and range of offerings tugs at the heartstrings with a touch of Homemade Mom, Aunt and Grandmother warmth. I'm so glad we chose Greywind. When I opened Resy to make the reservation...the entire evening was available. It gave me pause but I couldn't get passed what I had seen and read online. Shirts for servers and table napkins harmonious. Very nice glassware, utensils from wooden tray neat. Bar welcoming. Separate Spygold downstairs by the rest rooms. Happy hour ends 6pm.
ESG Menu. Too bad weekend only for drink-packaged option. Most thoughtful names mentioning even sous chef nice touch.
For drinks, we tried Grimm draft beer where IPA bitter overwhelmed by fruity sweetness at $10, very delightfully sweet house Riesling. Nicely refreshing. Then, Spritz cocktail for $20. Was asking our energetic server to choose between Boulevardier which was heavier negroni/old fashioned like.
Focaccia was ok for our tastebud. Perhaps too much? Hard bread, packed squash then ricotta cheese. Ensemble promising, just too much mouthful.
Ran out of sea bass, so tried salmon. Crunchy skin, ample creamy sauce in skillet, delicious. Burger, must have been nice. My son gobbled it before leaving any bite for me. Mashed potato divine. Deconstructed sundae good. Fudge, syrup, sour jelly and all. The best was crunch icecream container. Order tea here. I had chamomile. Asked for more hot water, and second serving tasted...
