It was my first time here at Suram - Hudson Yards and it has left me an excellent first impression already.
I was in NYC for a few days and I read other reviews for this place before I went. Needless to say, it has lived up to those expectations. The place was very new and had a very clean and modern decor. Looking at the menu, I was torn between trying the Salmon Crispy Rice and the Tri-Color Sushi combo. I couldn't finish both so I decided to go with the Tri-Color Sushi. For the main dish, I ordered the Shoyu Ramen, which is a classic for ramen establishments.
The staff was very attentive and accomodating. They even pour your drink and sauces for you. For the Tri-Color Sushi combo, I got salmon, tuna and hamachi nigiri, 3 pieces of each. It also comes with a spicy tuna roll. The fish was very fresh and mixed with the soy sauce and wasabi, was just perfect. The presentation was also very well done.
I've always been trying out a different flavor of ramen, because I had gotten used to Shoyu Ramen and they are a staple in most ramen shops. But I decided to go with Shoyu Ramen, because it has been a very long time since I've rotated back to it. The Shoyu Ramen here is done in a chicken broth. It was a little smoky at first, but it is a clear and flavorful broth. This is probably the first time a ramen shop has given me a whole soft-boiled egg, which is a great surprise. Along with that is seaweed, bamboo shoots, kikurage (earwood mushrooms), narutomaki, scallions and chicken of course. The bamboo shoots were crunchy, the eggs were soft and the ramen noodles were wavy and had a bounce to each bite. It was so good that I ended up drinking the broth.
The chef stopped by and we chatted for a bit. He also offered me a Salmon Carpaccio as a compliment from the chef, which is an appetizer on the menu. It is seared salmon with truffle oil and yuzu garlic soy sauce. The taste is unbelieveably good and was even better than what I had ordered as an appetizer. The salmon was very springy to the taste and the sauce complemented the fish very well. He also told me a little history of the restaurant, his own culinary experiences and how he created his own sauce for it. It was a lot of fun chatting with him, considering I was a foodie myself.
Needless to say, I will definitely be back to try another ramen and the Crispy Rice appetizers, since those definitely stood out in the menu. Changed my rating because we ordered takeout and came to the restaurant to pick it up. We had the Rock Shrimp Tempura and I stopped eating it after I bit into the first one because THEY DIDN’T REMOVE THE POOP TRACT FROM THE SHRIMP. Absolutely disgusting and now I will go out of my way to never come here again nor recommend it to my fellow neighbors in the area.
Original review: We live on the same block so my friend and I decided to try this new place for the first time. It is nice inside, minimalist decor and some orchids. Very nice staff and servers, the food was great (I had the ramen, she had the sushi), however the service was a little strange… some notes:
They currently do not offer alcohol but allowed us to go and get sake from the liquor store across the street. That was nice.
Offering chicken chashu in their ramen instead of the traditional pork. Not a good substitution in my opinion. However they also offer impossible meat as an option for their ramen - not a bad idea. Also there is no corn in the ramen which has always been a staple at different ramen locations in the city for me.
The food came out at different times so one person was left with nothing to eat while the other started to chow down. Minor issue but slightly annoying.
Trash scraps (straws and chopsticks wrappers) were not cleared from the table until near the end of service despite us being the only patrons in the restaurant. There were two servers on duty, again both very pleasant, but clearly bored with no one to serve as they have just opened - while you’d think that having two servers wait on one table would be more efficient, in this case it just added to their confusion as they were not communicating clearly.
An additional thing they might want to clear up is that their chef was taking pictures behind the counter with his personal camera, while wearing his food safety gloves. Shoyu ramen -- 4.3/5 • Egg and chicken in their ultimate form • It is a well-crafted dish, but the taste may not satisfy the average person's palate ... by that I mean the umami from the mushrooms and salt are like a playful punch to the abdomen. Add a tinge of bitterness from the bamboo, and you get the feeling this is an adult menu option, a creation out of Shokugeki no Soma, or designed for hardened warlords. I have no clue how a fellow reviewer called the broth bland.
Service -- 5/5 (We were the first customers on a Sunday, and other people trickled in during the tail end of our meal. Perfect circumstance, perfect service.) • Welcomed to sit at any table • Immediately asked for choice of drink (+ honest mention that the water is from tap) • Checked on us because we were taking a long time with the menu, but did not rush us when we said we'd be fine without suggestions • Surprisingly short wait for the food • Emptied plates/bowls immediately removed from table (one-at-a-time, almost overkill of attentiveness) • Water refilled often & before empty • Easy to flag down waiter for bill • Uses portable payment terminal with 18% tip as the lowest recommended option, which could be awkward for those seeking walk-in take-out or a guilt trip for penny-pinchers who do appreciate excellent service... but both staff circulating the dining area were as friendly in demeanor as they were professional.
