Undercote is a visceral, immersive experience. You’ll realize this as soon as the crisp, humid, somehow pure “unadulterated by NYC” air reaches your lungs. Just that feeling alone elevates the tone, which is already set by the beautifully radiating bar top, lush floral scapes, and the sharp, well kept staff.
Should you find yourself here and two seats at the bar are available, take it immediately. Be greeted by their kind faces, smiles at the ready. Don’t hesitate to order the Vesper martini with a citrus twist using the recommended Plymouth gin. Sit back and enjoy the gnocchi, a very familiar taste, but the texture is like cracking a crème brûlée with every bite. You have no idea, it’s wild. The remainder of the food will require a table of contents, and I haven’t gotten out of bed yet so no.
I want to thank Stefanie (apologies if spelled wrong) for providing tactful and superb hospitality paired with immense kindness, William for showing their articulate attention to detail in both presentation and execution while curating our drinks. Read moreUndercote is a phenomenal little gem hidden under Cote Steakhouse. Undercote is a cocktail lounge that serves food served in the regular restaurant allowing you the enjoyment of casual dining, but with the quality of fine dining.
The bartenders Caitlin, Stephanie, and Nate were all wonderful. Quick to respond and able to guide me to the optimal cocktails. Nate was even kind enough to make me a custom cocktail of his own creation with my favorite egg whites, which was phenomenal in flavor and complexity. I learned he does create most of the cocktail menu himself.
David, the manager, was very friendly and was able to help me identify the BMS on the Wagyu that was served. He brought out the certifications to show what each cut was rated at. They did not have the Miyazaki Prefecture, as it was changed for the Kagoshima Prefecture. They have a two ounce minimum, which is nice as I was able to order both the tenderloin and the ribeye.
It came served with rice, lettuce, and pickled cabbage. This was a really interesting way to serve the steak. They sadly did not offer Ikayaski style, but it was still a very delicious experience.

They were knowledgeable and helpful when it came to choosing the perfect drink, and their attention to detail was evident in every aspect of the experience.
