HOLY CRAP, we were completely blown away by Hoja Blanca. It’s a pop-up Mexican restaurant inside Truss & Twine on select nights, and it happened to be up and running on our first night in Palm Springs. The drinks were exquisite - unique and flavorful. But the food was the real star of the show. Hoja Blanca is in the business of serving inventive, beautiful, modern Mexican food. Every dish had a flavor profile that was new to us (despite growing up in SoCal and eating Mexican food my whole life). So so good. But this is the perfect balance between traditional ingredients, amazing flavors and contemporary cuisine.
