Copa in the evening is the best. I wish more could be said about their brunch. I'll break it down:
We came in to sit down and eat. They have a sign that says you have order at the bar, so we went to the bar and stood there for like 10 minutes while a calm gentleman and frantic woman made not that many coffee drinks. While we stood there, we looked around and there were 4 tables full of old dishes, limiting our sitting options.
Finally, after seeing another group walk in and walk to the far end of the bar to order did we realize that as long as we stood at the bar, it meant nothing-thanks for letting us know, guys! So we went to the far end of the bar and got in line behind a group of 5 all paying separate. As we stood there, we could see food coming from the kitchen being dropped off by a younger cook and an older woman. The food was just sitting there going cold on the counter waiting for the 2 baristas/bartenders to just call guests names. At one point some guy walked up and asked for his food that was just sitting there behind the bar. The frantic woman behind the bar told him it was almost ready, to which he responded, "no it's not. It just sitting right there I can see it." The other bartender walked up and handed it to the gentleman LIKE SHE SHOULD HAVE.
The rest of the dining room looked equally as uncomfortable. No one likes to see disorganization from a staff who didn't even have half their dining room filled... Especially when you are forced to pay AND tip before you are served. As a person who also works in hospitality, I always tip 30 to 50 because that how we take care of each other. However, this stressful situation left us feeling so uncertain about the food (if this is FOH, I cannot imagine what's going on behind the scenes where our food is made) that we ordered 2 drinks to go, left a low tip, and bounced.
This level of disorder is a top down effect. If you, Copa management, are facing staffing issues and cannot find someone dedicated to serve food to the customers who chose to walk through your doors, then YOU need to come behind the bar and lend a hand or shut it down for the day- bad service hurts you more than a day of no service. Nevermind the to-go orders. You take care of those who chose to make the effort to come in. We watched how 25 people in that room all collectively decided to not only go somewhere else next time, but also not refer Copa. Hopefully they know how dinner service goes, because that would be your only saving grace and the ONLY reason we will ever return.
That stressed out woman behind the bar was not having it and her energy killed mood in the room, especially when she lied to that guy about his food while the entire room saw it was BS. Zero accountability. Like I said, it's a top down issue, so it's not all her fault, except for the lying.

We started with the beef empanadas for a delicious snack and then went to indulge into the jam Rock chicken sandwich and the El Barbacoa.
