Had to try Seattle's In-n-out burger when visited the city. I was expecting a regular fast food burger joint, but with a higher quality. Wrong! This is a full serve restaurant, but only serve burgers or something related. Thus expect you pay more than usual, unless you visit them during lunch hours. First off, as walk in the joint, you noticed is.. the sign of "wait to be seated," instead of walking directly towards the counter to order. Once seated, the waiter comes with the menu and taking orders. The water jugs and the silverwares wrapped in napkins are already on the table. Organic Ketchup and mustard bottles are also ready on the table. We had two 8ox burgers, a large fries and a couple of shakes for more than $50. However, here are the good things...
Overall the burger was tasty, and the patty was cooked just right for us. It was juicy. We also had a couple of shakes, Maple bacon and Strawberry. Both are delicious. Maple bacon is so unique, and the combination of the salty taste and the texture from the bacon and the cinnamon after the sip from the dominant sweetness from milky shake worked strangely well. I will definitely miss it when I come back to home after the trip.
With all the good sides, I still have some guilty feeling of spending more than $50 on a burger meal. Some may not agree, but this is only reason that I took out a star...

I'm serious about burgers. I photo-document every burger I've eaten over the years, so it's pretty significant that I'd rank this in my top 5. Where do I start... I ordered The Union burger and my wife ordered The Fondue. I won't review each individually, but instead focus on the elements in general.
Meat: Near perfection. Seasoned perfectly and cooked to a juicy medium. I could have used a little more pink, but it was perfect for my wife. Not sure if you can get it cooked another way, but medium is the default.
Toppings: Both burgers had excellent, high-quality fixins. The Union comes with candied bacon, sautéed onions, gorgonzola, arugula, and a peppercorn ailoi. Not sure what all was on The Fondue, but it came with an amazing gravy/au jus for dipping. I really like a place with well-curated toppings because when done right, it's so much more satisfying than a pick-your-own toppings place. Every element of these burgers was chosen thoughtfully and complemented each other perfectly.
Bun: Soft but firm, delicious brioche. Got a little soggy around the bottom edges but generally held up well.
Sides: Good Lord, the sides. The Brussels sprouts with prosciutto were pan-seared just right and the truffled garlic fries were great. Even the locally made ketchup was nice and tangy, and I usually hate any kind of bullshit ketchup that isn't Heinz.
Service: Attentive, helpful, and exceedingly friendly. Our server was bubbly and fun and provided great, knowledgeable recommendations.
Other: The beer list was pretty small but had some interesting stuff. I've heard others saying the whiskey and cocktails are good, but I can't verify myself.
Overall, the only thing I hated about this place is the fact that I haven't been there before. I definitely plan to come...

After a Yelp event and rave reviews, I was all for a nice juicy hunk o' well-raised beef, cooked perfectly and piled high with all the fixings you want: mushrooms, cheese, veggies, bacon, you name it, sandwiched between fluffy bread toasted to perfection.
Okay I lied. I got a Veggie Burger. (Which was utterly fabulous and housemade, with spices (cumin? garlic?) that made it really interesting and fresh-tasting. No frozen pre-made patty in sight.
But the dining companion, whom I like to think I can Yelp for because he won't, is kind of a princess about burgers. (I can call him that when he won't Yelp himself).
His results as follows, from scrupulous tasting from a few great places around the city: +Hunger: Touted as the "best in the city," it's not. Too small, flavorless patty. Disappointing. +Lunchbox Labratory: Are you interesting in tasting beef here, or the 13 pieces of bacon on top? +Tavern Law: Fancy. Too fancy. Let the beef speak for itself. +Bastille: Delish, especially with show stopping fries, but not quite. +Smith: A strong contender. Slightly too greasy and lack of show-stopping patty. +8 oz: "this is the BEST BURGER IN THE CITY." !!! We have a winner!
You heard it. This is the best, most flavorful and juicy burger in the city. The sauce and topping compliment the strong beef flavor and let it speak for itself. I loved the sides available too...honey glazed carrots? Brussel sprouts! I
