However, this cocktail was served on ice, a departure from the traditional presentation of a Sazerac, which is typically served up. This slight misstep muted the drink's vibrant character somewhat, diluting the flavor over time. The Barrel Aged Governor was an exciting take on the whiskey cocktail, pairing Bushmills Irish whiskey with a splash of Lazzaroni amaretto, a dash of cinnamon, and an orange twist, served on the rocks. It was a symphony of flavors, the spice of the whiskey and the sweetness of the amaretto intertwining harmoniously, with the cinnamon and orange adding a tantalizing zest.
The Barrel Aged Grand Marnier Manhattan was another standout, an intriguing mixture of Buffalo Trace bourbon and barrel aged Grand Marnier, garnished with an orange twist. It was a heady blend of robust, smoky flavors, the orange twist providing a delightful contrast to the intensity of the whiskey and the Grand Marnier.
The Toki Highball, with Suntory Toki Japanese Whiskey, house-made ginger syrup, fresh lemon juice, and soda on ice, was a light, refreshing contrast to the robust spirit-forward drinks. Our meal concluded with a divine key lime cheesecake. It was the perfect ending to the meal, with its creamy texture and the right balance of tart and sweet.

Tucked away at the bottom of the stairs near the gum wall on a quiet evening after the market above is closed, there's a happy vibe inside where the taps flow freely and dough gyrates to perfection in the air. The service was perfect for the occasion - my server said she'd been working there 10 years, and I can see why someone would choose to remain in this pie heaven for so long. My review is based upon the Truffle Tre Fungi pie I enjoyed tonight: Crust - 5/5: This is the type of crust I yearn for when I crave pizza. The right thickness to support the rest of the pizza without being too bready, but not too thin like a cracker. Stretched evenly and consistently, and cooked quickly to give it a crispy outside and soft interior with the right amount of chewiness. Sauce - 5/5: The amount of olive oil base was perfect for this recipe. Toppings - 5/5: There were a few pieces of stem which were too tough to chew, but overall the mixture of shrooms had great flavor and were abundant. I was quite impressed at their blend of mozzarella and Provolone which created a fantastic taste and texture. There was just the right amount of herb mix on top to add flavor without overpowering the rest. Preparation - 5/5: I was a bit worried the truffle oil combined with olive oil base would result in an overly greasy pizza, but both were balanced very nicely which resulted in little to no dribbling. There was the perfect amount of charred flavor underneath, and square cut style was just right for the size. I enjoyed the unique presentation of perching the pizza board on top of a can of olives when placed on the table. I'm not easy to impress with my high pizza standards, but I could find absolutely no fault with this one. I look forward to returning again and sampling their other recipes, and until then I will reminisce fondly on the crust.

Let me tell you, Jason is an ABSOLUTELY amazing bartender and addition to the team. Izzie was our server, and she was phenomenal on giving us recommendations for drinks. Izzie came over and said that Jason wanted to grab our first round of drinks since we drove so far to spend my 30th birthday there, and it being our first time. Such an amazing entry way down some spooky stairs but at the end of the stairs is an absolutely GEM. The pizza was PHENOMENAL, the sauce was perfectly balanced without being sweet or too savory/salty. It was perfectly light, subtle and had amazing flavors ranging from garlic, to robust tomato, to fresh basil scents.
We got the Pizza Con Carne and when I tell you I want every bit of Chorizo meat they have, I mean it! It was like little pepperoni but it was chorizo and had the best garlicy-meaty flavor. I will ALWAYS make this a staple to come back to every time I come to Seattle. This was My first official time staying in Seattle overnight. Even the security outside Pikes Place Market recommended their pizza and drinks. Overly fair priced drinks ($10.50-$15.00) for a CRAFT cocktail.
