Not as good as prior experiences at the Madison, MS, location. Went last night Thursday, January 2, 2025. 3 people. It was our first time visiting the new development around the restaurant, and, again, previous experiences with the Madison location made this a no-brainer for us.
The restaurant was very clean. Felt very new, not sure how long they've been open. The elevator at the entry lobby takes you up to some kind of bar / concert scene, so that sounded fun from what we could hear in the restaurant.
Service was okay.
Hostess didn't seem genuine at all, maybe because we came in at close to 8 pm, not sure.
Server (Star) was either highly inexperienced or poorly trained. Felt like she was trying to do the right things, but maybe she had closing duties or tended to something else, but there were minutes on end where we didn't see her and drink refills were puzzling.. If we weren't asking for refills, we were answering the eternal question: "Would you like more to drink?" Are there drink rations at Georgia Blue? Only until the guests have stopped eating and their hands are down would you ask that question. If guests are in the beginning/middle of a meal, don't ask them if they want a drink refill, bring it, and keep it full. The assumption is your guests don't want to (A) choke on the newly arrived food or (B) be keenly aware of the time it takes until the food hits the table. Star made solid communication with us, making clear our order, so what we ordered came to the table with no issue - I'll definitely give her that. She was generally friendly and not annoying, which I appreciated.
The kitchen and the food were a bit of a rollercoaster, too.
We got the spinach dip starter, and it was phenomenal. My expectations flew through the roof for the entrƩes to come.
Unfortunately, food temperature was a miss.. My sons gnocchi was immediately found cold, but it was just the gnocchi elements - the seafood in it was flavorful and sized nice (plump shrimp and decent crawfish). Star promptly removed the dish and returned to the kitchen. Then, my wife said her sweet potatoes and chicken dish were lukewarm at best, shrugged and kept eating. Star came right back to the table saying, "They heated it up." My eyebrows went up. So the assumed from-frozen gnocchi was then re-heated up in the microwave - no recook? Interesting. I ordered the gumbo against my better judgment. I'll say this, born and raised in New Orleans, I have never had or heard of gumbo served on a bed of potato salad, but I haven't heard or seen it all and that's what the menu said and that's what was brought to the table. This was 100% on me, no problem.. a rice option was clearly stated in the menu, and Star even came back to the table to confirm my potato salad selection. (That should've been my red flag notice.) But I'm always game for new and different, and I thought, This must be something I've been missing all my life. Plus, the menu touts it as a Cajun secret or something. Sure. Immediately, I found the potato salad to be cool and the gumbo warm -- which makes sense until the logic hits me: this will drastically reduce the temperature of the gumbo. Iwant missing anything. I don't think my brain was able to process it, tasted wrong. Dunno. I would almost recommend exclusively serving it with rice and having a side of potato salad. Let people attempt a morsel of this "secret" before it ruins the entire dish. At that point, I didn't want a recook or reheat to get it right, so I ate about 80% of it. The gumbo, where I could isolate a spoonful for a more concentrated taste, was good.
Overall, not an experience that made us want to come back, at least not soon. We were not wow'ed. I considered our late dinner as a potential reason and on a Thursday night wrapping up the holidays, but still, you have to show up for guests no matter what time or day it is. And it's okay to refuse service/seating prior to closing as a sign of respect for not only your kitchen staff but also your guests in avoiding these...

I no longer live in Mississippi, but I've been to other locations of Georgia Blue in south MS that were fantastic so I was excited to see this just a few minutes off of my route. Unfortunately, this location of Georgie Blue is clearly managed poorly. From the host stand to the checkout experience, this was a whole mess. I should have looked at the reviews because the negative experiences were spot-on.
Like other reviews mention, I had to greet the hosts who were too preoccupied with their own conversations. It also seemed that they were given little or poor guidance on scripts, which would be a theme with the other employees as well. We were told a hostess would seat us "when she's ready to."
We get to the seats and the server has no better soft skills than the hosts. Even her attention to detail was really poor. I order my drink first--a water with lemon. The other drink was just a water. Both came out with lemon. Obviously, this is not a huge deal, but it seemed to be the one arena where something at least could have gone perfectly right. I don't need perfect service by any means, but throughout our meal there, she was hasty and dismissive despite it being slow. Her treatment of my table wasn't personal, at least, since I overheard her speak in the same manner or worse to her other guests, including a rude interaction involving a guests' accent while she took his order.
We ordered a sandwich and a poboy. I wasn't keeping an exact time of how long it took, but I did find myself getting antsy after waiting 15 or so minutes for sandwiches. After that point, it seemed the food had been forgotten, but I didn't see the server to ask about this. When the runner eventually brought it out, he stood on the empty side of the table rather than nearby our seats. Instead of reaching over to hand me my plate, he slid it at me like I was a dog. I was a bit shocked by this behavior.
Both dishes were sloppily put together, especially given that they were sandwiches. My sandwich was lukewarm and was not as flavorful as I remembered from other locations. It was at least cut, but in an awkward direction given the layout of the ingredients. The poboy was served uncut on a plate that it hung off of on either side. Its filling did not reach both ends, and the ratio of meat to undercooked onions was a bit much. For something that claimed to be slow cooked for 16 hours, the meat was pretty tough. Expo, if there was any, clearly was not taking care to check plates. There's no way this is how that sandwich is typically served. It either must come on a larger plate or cut in half to fit on this small plate. Given the small plate and lack of a knife, it was pretty impossible to eat neatly, but we were unable to resolve the lack of attention in a timely manner.
Even though the poboy went basically untouched, the server did not ask if there were any issues with the meal. Instead she asked if we were done. I cannot recall how it was phrased, but it was again very awkward and dismissive. I requested boxes and the check.
When the boxes were brought out, they were too small for the whole poboy (my guess is because it is meant to be cut before serving--this sandwich is available to-go so surely they don't just cram it in there). We tried to get this issue resolved and were met with a combative attitude rather than a solution-oriented one. Even bringing out an appropriate knife seemed to be a burden for this server.
When it was time to pay, I filled out the survey to which the server snapped "you don't need to fill that out" while reaching toward the device. I very much believe I did. We got to our table about 6:15, and we were all ready to put in our drink orders, as we kept looking at the menu to figure out what we wanted to eat for supper tonight. We kept waiting, and waiting, and waiting for our server to come, and she did not. A table came in 25 minutes after us with 10 people and their server came right to them and they had their appetizers out before anyone even came to our table. Then. 45 minutes later our server finally came. And we just went ahead and ordered our drinks and food so we could at least attempt to get it in a timely manner after us waiting almost a whole hour just to order some water and sodas. Then, our food came out about 25 minutes later, which was decently good timing since there was 7 of us. And then one of us had a silverware set that was dirty and had (not all the way washed off food) still stuck on the knife that she needed to use. So we just gave her one of ours that appeared to be cleaner, but still looked to have some staining and discoloration. We also got refills on all our drinks and one of our friends newly refilled drinks had food in the cup, and she hadnāt even taken a sip of the drink yet, NASTYYY!! And then we had to sit there 40 more minutes after we were all done eating, just to ask for the bill. And when we got our bills, she only took one persons money and came back 20 minutes later with her āchangeā but shorted her a dollar and didnāt come back for 20 more minutes. And one of my friends checks was charged for two whole meals when she asked for A SIDE SALAD which was SUB $4 EXTRA DOLLARS. And we asked for the salad that was on the list that you could sub it for a side. My friend got a bowl of gumbo and a SIDE SALAD FOR $4 and she even told the waiter 3-4 times she wanted a side house salad. We all heard her say a SIDE HOUSE SALAD. The waitress agreed they had that as a side salad. The waitress NEVER told her they didnāt offer it as a side salad, she just said āthe house salad as a side? Okay!ā And they didnāt even know she got gumbo and her salad came out first and when we were all done eating is when her gumbo finally came out. Ridiculous!!!! She didnāt get to eat any of it, and she just had to take it to-go as we were all ready to leave after our terrible experience. And lastly, my friend told the waiter she got charged for a full salad when she asked repeatedly for the side salad that was $4! And the waitress said āoh. Well, we donāt offer that one as a side saladā when it clearly said they did. And she didnāt take it off her bill, and my friend was charged $42 for a āfull saladā and a bowl of gumbo. Awful! That was the restaurants error, and they should have fixed it but nope! And to top that off she didnāt bring my friend her $4 in change back that she paid with in cash.
