Saltiest, dryest, most overcooked (we ordered medium) burgers we have had in ages. Lettuce was slimy and wilty, tomatoes hard and pale, the sides of fries were unsalted and lukewarm/cool. The loaded fries had some cheese sauce and bacon on the top, but it was mostly just plain unsalted fries. Ingredients were clearly good quality, but whoever made the food might need to taste what they are making every once in a while, as it is just wasting food. On top of that, when we ordered at the bar, we ordered a single extra side of mayo, and when the food runner brought the food out it was absent; we asked for it and she got a big attitude and acted as if it was a huge inconvenience, saying they normally charge for it and almost didn't give us one until I politely insisted we told the bartender and were not given a print receipt, but she could check with her. Further, we were the only food order while we were there and we got carryout (we could see the kitchen and orders come up) and it took around 35+ minutes for our order - while I don't know if that is usual for 2 burgers and 3 sides of fries, perhaps it was because they were overcooking the burgers and letting the fries get cold? Our tab for 2 burgers with sides of fries + 1 order of loaded fries + 1 side of mayo came out to around $42. The main UC location is always top notch, and this was our 1st time here - I may give it another shot in 6-12 months after the cooks have had time to recalibrate or be replaced, but I cannot currently recommend. I much prefer this location over the UBC beirhall, as it is the original UBC location.
The copy for Schnickelfritz describes this as a Weissbeir using primarily white wheat in the grain bill. Beer needs barley, yet pale unroasted barley.
I was not pleased with Schnickelfritz the first few times I tried it. Something changed. The style overlaps to the point of being hefeweizen. Nestle there to share space with Hoegaarden and on US soil Celis White. (Both are available for you to compare.)
Such a Schnickelfritz must use maybe two or three yeast strains.
So, while at the big loud echo-y UBC beirhall, the recipes do evolve, as with Urbane Underdog a bit.
Wholly superior to Bluewood Brewing Hefeweizen. Wafly Shlafly can't touch this with their terrible cardboard beers.
I'm pleased with the gradual evolution. Schnickelfritz is a stalwart and vanguard UBC offering.
Yet I like the quiet original UBC location. Almost five stars over the other location.

THAT BEING SAID, when did it be come acceptable to yell at a customer to EFF OFF if the customer was upset it was taking more than 45 minutes to get their check. And oh, if you want to enjoy a beer while waiting, sorry 45 minutes to order a beer also. I know it is a new world post-pandemic when it comes to hiring staff and I love microbrew beer and would also argue that UBC has some of the best beer in STL. I am in the top 25% of all reviewers for microbreweries across the US and to date I believe I have never given any microbrewery less than 4 stars. My advice, DON'T GO TO MIDTOWN... go to the Grove or even Germany, because the staff at Midtown thinks that it is ok to yell and curse at you... obviously it is not their problem as they could care less about...
