My husband and I came to Copal for date night—and wow, we were not disappointed. I had been searching for a place nearby with great reviews, local flair, and something that felt like a special treat. Copal checked all the boxes and then some. Honestly, the most disappointing part was realizing we’d never been here before!
The food was absolutely delicious, with generous portions that left us with leftovers—and the leftovers were still tasty the next day, which is a rare win. (Though of course, nothing beats how amazing it was fresh!)
Our server, Josue, was fantastic—attentive with perfect timing, funny and kind without ever being intrusive. You could tell he really cared about both the food and the people he was serving, which made the whole experience even better.
One thing I usually struggle with at restaurants is loud music making it hard to hold a conversation—but Copal nailed the vibe. The music added to the atmosphere without overpowering it, so we could actually talk and enjoy each other’s company. Two tables were celebrating birthdays, and I highly recommend doing the same here if you want to see the dramatic candle moment—it was a fun surprise!
I also loved how many vegetarian (and easy-to-make vegan) options were on the menu. That alone makes it a go-to for future nights out with friends. We didn’t try any alcoholic drinks this time, but the ones we saw looked beautiful and tempting. I really appreciated that they had a solid non-alcoholic drink menu, too—the lemonade was phenomenal.
The space was clean, inviting, and I loved being able to see into the kitchen—something about that transparency always makes me feel more connected to the meal. Best of all, the price was unbeatable: under $50 for the two of us, with plenty of food to take home.

Read moreIf I could give Copal Contemporary Mexican Cuisine more than five stars, I would. Let’s start with this: I have never been a fan of ceviche. In fact, I usually avoid it altogether. But tonight? Tonight I became a believer. Their ceviche didn’t just win me over, it converted me into a full-blown fan.
My girlfriend ordered the tamarindo Paloma and I swear, if she had dropped dead in that moment, she would’ve gone out with the biggest smile on her face. That drink alone could’ve written its own love story.
The atmosphere? Perfect. It somehow made me feel ten years younger while still letting me actually talk to my girlfriend without shouting across the table. Not that conversation was really needed, her eyes rolling back in pure joy after every single bite told me all I needed to know. Asking her if she liked her food would’ve been like asking if water is wet.
As for me, I honestly don’t think I’ve ever been this satisfied with a meal. Closest I’ve ever felt to heaven, no exaggeration. And the MVP of the night? Josue, our server. The man didn’t just take our order, he read our souls. He knew what I wanted before I knew what I wanted. At this point, he’s family. Expect to see him at our kids’ birthday parties and random family barbecues… he’s earned that spot.
The only downside to this entire experience? My poor girlfriend will now never believe me again when I tell her that her cooking is “the best meal I’ve ever had.” Copal has ruined that forever, because she’s seen the face I make when I’m truly satisfied, and it happened here tonight.

Copal is a type of tree resin used as incense I believe by some Mexican cultures for spiritual purposes. The menu gives you kind of a quick lesson on that but it was a cool cultural piece of information….plus I believe they were burning that incense in the restaurant!
Overall, the only complain I had was the screaming baby sitting behind us….but that’s not the restaurant's fault 😝
The atmosphere was kind of day of the dead themed. Lots of fun neon. I love the bar. It looked kind of 1940s or something.
The food was amazing. We got the trilogia aguachiles and a few street tacos. Everything was so flavorful and beautifully presented. We got a Mexican Old Fashioned and a Cadillac Margarita and both were amazing. I don’t even go for mezcal usually…but the Mexican old fashioned had it and it was quite tasty!
I also like that they try to get a lot of their liquors from local, family-owned companies so they had a pretty unique selection on top of the standards. The bartender even came out and told us a little bit about the tequila we had chosen for our margarita.
