I apologize for taking so long to leave this review. I am forever grateful to the Vail Chophouse in Lionshead Village for an incredible evening celebrating my son and daughter-in-law to be on the evening of August 29, 2024. We were planning a destination wedding in Vail and I was in charge of the rehearsal dinner for 60 people and welcome party for 150 people. I had never been to Vail so most of the planning was site unseen. I worked with Stacy throughout the process and she continued to calm my nerves and make things easy for me. She helped me plan a beautiful Italian buffet, a nicely designed table layout, microphones for speeches, wine list and the Vail Chophouse’s very own homemade Limoncello at each place setting to cheers the special couple. She even brought in a chef from one of the Italian restaurants in the area to add a special touch to the meal. After dinner, we welcomed 150 guests with an incredible display of hors d’oeuvres and desserts. The indoor area worked perfectly, the bartenders took care of our guests Incredibly and the indoor and outdoor space was just perfect. Not to mention the beautiful view surrounding us. Again, I am forever grateful to Stacy and highly recommend the Vail Chophouse for any event. I also want to mention Joey. I met with him the day before the event to go over any last minute details. Read morePremium prices with roadside diner quality service. Bathrooms were wrecked and disgusting. $60 filet came dry and with no sides. Side of mashed patato $9 were cold. Completely underwhelmed and will never return or recommend. Montauk's puts Chop House to shame.

Dear Sir or Madam - In my 40 + years of business I have learned that frustrations are results of mismanaged expectations - A reasonable expectations for spending premium steakhouse prices are that the establishment and ownership hold the standards of their staff and establishment to the standard of their pricing, locale and clientele. No excuse can be made for poor leadership as there was an obvious lack of leadership and affirmative directives of responsibility upon our visit. The best tactic to meet or exceed expectations is to avoid dissatisfaction by overachieving. In my subject matter experience I stand by my review and will add that any establishment that serves a poorly prepared $50.00 8 oz filet "a la carte" with no garnish, side or pride should be grateful for the two stars given. Here are a few establishments you should visit as a barometer of your quality and prices - Montauks, Talisa or Sweet Basil. As an example a Sweet Basil Wagyu Ribeye 10 oz filet cost $52 and is prepared with rosemary crushed potatoes, broccolini, roasted garlic puree, salsa verde. Luckily, I sat inside the restaurant because the guy playing was loud enough for the whole village to hear! The receptionist was nice and took me to my table. It took a while for my waitress to come get my drink order. This was kind of the theme of my visit here. My waitress was great. She continued to check on me frequently throughout my meal. But it did seem like the restaurant was under staffed and everyone working was being overworked. Just an observation. But I wouldn't go expecting speedy service. The food was, eh, ok. The New York strip steak was cooked to a perfect medium rare but did not have much flavor. It was seared and maybe cooked in a pan rather than on a grill. I would rather give up some of the perfect cook to add more flavor by having it cooked on a grill. The mashed potatoes were just ok. The bacon wrapped asparagus were good. The asparagus was cooked all the way but not too much. And almost anything wrapped in bacon is good. Last is the Crab Mac and Cheese. The noodles were cooked well. There was a sauce in the bottom of the bowl but it was not cheesy Mac and cheese. There were 3 clumps of crab meat on top that were about the size of a silver dollar each. The Crab Mac and Cheese had pretty good flavor, it just wasn't cheesy enough to be called Mac and Cheese.
