Decided to try this on a Thursday night, and it was already extremely busy which is a good sign that the food is great, so I was already pretty pumped going in. Despite it being pretty full already, I was seated immediately. So clearly they're off to a great start.
The setting is kinda "retro-modern" for lack of a better term, but it was sleek and still cozy enough. I tried a "sorel martini" and while it had nothing to do with a martini, it was a very light, floral, and fun drink.
First thing that came out was their "grazing board", and for the first time in a long time I did not feel ripped off by ordering a charcuterie board at a restaurant. Every selection was top notch and unique. The standout, was this citrus butter they served with it that didn't seem like it should work but was so good you could probably slather it on the curtains and make them edible.
My main was the pork tenderloin which was perfectly prepared, and so tender you could cut it with a sharpie. With a cherry reduction that fantastic, Another flavor combination I wouldn't have thought of, but it was unique and to die for. I also tried my dining companions fries that were very good and super crispy, but a little under salted in my opinion.
Lastly I ordered the chocolate cake.
Forewarning, this cake is less cake and more fudge... Or possibly even some kind of white dwarf star material. This thing was dense, and I mean really dense. All that being said, it was absolutely delicious and I couldn't stop eating it, one of those things where I kept telling myself to put the spoon down and then it would magically teleport to my hand again with more cake each time.
My last few praises: the portion sizes are larger than you would expect at a restaurant this nice, which is a huge plus; the staff was all exceedingly friendly; they serve their food on normal plates with minimal gimmickry; and they are attached to a bar that looks extremely nice that I would like to check out someday.

Our date night for two turned into a catch-up with a family friend who happened to be in the local area. The Chapman was able to accommodate our reservation change on short notice. We shared our need for vegetarian options with Emily, our server, who was more like a dining concierge during our meal. Emily was knowledgeable of the menu and told us where changes were possible or additional options were available.
With such an able guide in Emily, we took advantage of almost the whole menu: drinks, salads, entrees, and desserts. The smoked blood orange brown sugar old fashioned was perfectly made and presented. Whether you are a pescatarian, vegan/vegetarian, or steak or burger expert, the Chapman has something for you. We tried and enjoyed the BLT Wedge and the Citrus Farmer's LOL Chopped Salads. The wedge's blue cheese vinaigrette was so good that we requested a spoon, so we didn't miss out on any of its goodness. We also loved the added crunch in the chopped salad from the pepitas. Our entrees included the Bronzed Florida Fish (red grouper), the Angus Beef Brisket Burger, and the Roasted Local Mushroom Pappardelle. These entrees were cooked as expected and had a wonderful blend of complementary flavors. Everything was worth the price.
One word we used throughout the meal was fresh. This was evident even in our desserts. Given the ubiquitous nature of key lime pie across Florida, creating something new for diners is challenging. However, the Chapman did an exceptional job blending a variety of citrus flavors into a deliciously decadent pie. Our second equally delicious dessert was the pear and tart cherry tart.
