It's a bit like throwing darts except really big darts with a hunk of sharp metal on one end which flies irregularly. It is quite easy to get the hang of in short order. It also helps to have the expertise advice and safety briefing from Mike. Position of the axe head at time of contact with the target is determined by the distance at time of release. That said, if the handle is hitting the target, step back half a step, if the flat head of the axe is hitting first, step forward. The geometry is pretty simple to work out, just be consistent in your throwing position and then it's a matter of moving forward or backward to get the tip to hit into the wood. Mike wet the targets down with a spray bottle first so the wood is a bit softer and more willing to receive the blade.
As far as safety goes, my colleagues said that I was nuts to go and throw axes because of the supposed danger. One colleague then shared that for a team building activity, they had gone to pole dancing lessons--the whole mixed team. Having done this activity now, I can say with certainty that it is less strenuous than pole dancing, actually pole dancing, not watching pole dancing to be clear.
