TL;DR: Take the RCCL, but don't leave from a Chinese port. Otherwise, you may feel like you're trapped in a Chinese Disneyland for the duration of your cruise.
With a few exceptions, most of of the staffs on board were highly enthusiastic and committed (but remember you do have to pay gratuity).
However, if you value a relaxing and/or luxurious sea vacation, DO NOT leave from Hong Kong (or anywhere from China for that matter), especially during peak seasons. The ships will be extremely noisy and crowded. To give you an idea of the noise, you won't be able to talk to your family members sitting across the dining table with your normal voice, and you probably won't hear a thing the captain says over the PA system from many public indoor areas, because people just keep yelling next to your ears.
On to some personal experiences: on our cruise there were loads of guests from mainland China (mainly the Guangdong area). There were 7 to 8 group playing Mahjong (NOISY) right next to the outdoor pools, where people normally relax, sunbath and read books. A guy had a portable karaoke machine on max volume and sang at the public area on deck 11, right above our room which woke us up at 6am. This happened TWICE, on two different days, even though a security guard and I drove him away the first time it happened. Talk about extremely selfish people!
After getting awaken at 6am the second time, I sat down with the front desk manager who admitted that they get lots of similar noise and guest behavioral complaints, but mostly from non-Chinese guests, and asked where we are from. Funny.
Whenever people opened their mouths, they yelled. They especially enjoy making noise in confined spaced like the theater (even during shows!) and the elevators.
