If youโre looking for an unforgettable dining experience in Panglao, Tomar at Amorita Resort is a hidden gem that deserves all the praise it getsโand more.
From the moment we were seated, our evening was made extraordinary by Marlo, our waiter, whose service went far above and beyond. His warmth, attentiveness, and incredible attention to detail ensured our dinner was seamless. Every recommendation he made was spot on, elevating our experience to another level. Itโs rare to find someone who anticipates what you need before you even think to ask, but Marlo managed just thatโnot just with us, but with every table he served.
The food was nothing short of excellent.
The Pescado al horno con verduras was a highlightโthe bread perfectly toasted and the fish cooked to absolute perfection.
The Calamares fritos were divine, especially with a squeeze of lemon that brightened every bite. Tender and flavorful, the meat had just the right textureโnot chewy, just melt-in-your-mouth good.
The Paella de Mariscos was, quite honestly, an arc de triomphe of flavor. Every spoonful was rich, fragrant, and balanced. While it didnโt have the traditional socarrat, the rice was cooked just rightโnot too wet, not too dryโwith herbs and spices that complemented one another beautifully.
Surprisingly, the star of the evening turned out to be the Patatas Bravas. Such a simple dish, yet so masterfully executed. The balance of crispiness, tenderness, and bold flavor was extraordinary. A second too much in the oven would have ruined it, but here it was flawless.
Every dish was served promptly, with no delays, which made the evening flow effortlessly.
I wholeheartedly give Tomar 5 starsโnot just for the food, but because of how complete the entire experience was. The atmosphere, the flavors, and most importantly, the impeccable service from Marlo all came together to create a dining memory I wonโt forget.

Tomar is located above the Saffron restaurant in Amorita Resorts.
Even when you arrive, the entrance is hard to spot because the wooden door just seems to blend into the facade. Walking inside- I was pleasantly surprised by the striking beautiful decor and ambiance.
Marlo was amazing and was the perfect host. He was very friendly and knowledgeable about the menu to answer our questions.
We ordered the patatas bravas, pescado al horno con veduras, calamares fritos, and paella de mariscos.
My favorite dish was the patatas bravas. It's amazing how such a simple dish can be cooked so well. It was crunchy on the outside but soft and fluffy on the side. It was seasoned so well.
The paella was also very good but it didn't have the socarrat that is so characteristic of paella.
Overall, the dining experience was amazing and was elevated by the great service. My water cup was never half empty!

We asked how it worked we were told the tapas are up to the chef's discretion and they only had one red wine. we agreed anyway.... What we were brought out was a cutting board with slices of bread topped with random "tapas" (aka not on small plates) and they were not great. Two included chorizo even though I said I don't eat pork. The only seafood option was a sardine and it was not appetizing. The rest were simple vegetables. We didn't get to try anything that we wanted, such as something as simple as paella. I don't understand the good reviews.
