It's so nice to go to a quality fish market. On the flipside, everything looks so good that if, like us, you've got a small freezer, you've got a tough job deciding what to get and what you're going to have to come back for. First world problem!
We started with two whole sea bass, that were an impressive size, compared to the tiny fillets you get in the supermarkets. We had them filleted for us, and kept the rest to make a stock with.
