How on earth do you rate 4.5 stars or has there been a major change in management and kitchen . Possibly the most incompetent and horrible , yes horrible experience ever . How were we convinced to book in the first place was seeing 4.5 stars and the difficulty of booking on line so we thought they must be flat out and had to be great . So I asked my wife to just walk in and book . Yep . Hooray it worked . So we arrive early and we are left waiting for no less than 7 Minutes Whilst there is only two tables seated , 4 waiters walking around in circles with nothing to do ( not even eye contact let alone acknowledgement ) whilst the manager is deep in conversation with a guest at the bar who looks up and again ignores us . Eventually he walks up asks our booking name and first thing he says is we need the table back by 730, Is that ok ? We are seated and menus dropped on table , wine list dropped on table and he walks off . Still 4 waiters walking around aimlessly with no direction , no offers of a drink no anything . Eventually a waiter walks over with a carafe of water , drops it on the table and walks off . So we pour our own water and finally a waiter shows up who asks us if we would like still or sparkling 🙈🙈🙈🙈. I thought let’s order a couple of simple things as we are all thinking this is not up market dining ( although the prices clearly are ) . ( We eventually wave a waiter down, can’t call them servers as there is no service ) . First thing we are told . We have no steaks we have been so busy . Ok . We Order a dozen oysters and two simple pizzas as kids are starving . Their display kitchen is not manned . They must have a kitchen out the back ?? Chef eventually shows up more concerned about how his hair is rather than making a decent pizza . Oysters and pizzas show up at the same time . Oysters a soft and look nothing like the menu description . Pizzas are Luke warm , burnt on the bottom and cheese is not even melted . Kids are starving . Few bites each . We paid the bill and we are asked how was it ? Horrible I say . Oh ok , hope you give us another go . No we WONT . Two pizzas and a dozen oysters , $166 . Absolutely the worst experience . Manager should be a kitchen hand , no management skills no people skills and no service skills . As for the wait staff . Nice enough but absolutely no clue . How you sell yourself as up market is a shock to us . We will never be back not even if you paid us . Up there with the worst of the worst . This is Tasmania . People are friendly , food is amazing , well it is everywhere else . We went to Peppina after that and had a fantastic experience . Have had several phone calls since staff obviously read this review . Thank you we appreciate the efforts and the offers to come back and even for free . As a regular here, my first in April 21 and five more stays, but until now I loved prior nuanced attention. Staff are still attentive - the more junior, I expect. The Maîtres d were very much present but not engaging with us or other customers. The service in Tesoro was dreadful for dinner the first night, with service staff being run off their feet, maybe short-staffed? Our meal on night one was staggered, and the pizza arrived so late after ordering we were given the gift of free wine. The breakfast was challenging as tables were dirty, not reset, and ordering was “guest activated” with lead staff not ‘clearing as they go’, leaving the room with an air of frenzy. The leadership should model on this.
The second night’s meal - one of the steak choices
The cos lettuce was not cooked as before until the edges of the leaves blackened and you could not see the inner leaves releasing their moisture. The grated, wonderful cheese was marred by the still-cold lettuce.
The beautifully prepared eye fillet steak ($59) was, in a word, phenomenal, but the accompanying vegetable (said chilled cos) was just too ugly and not cooked - it was raw! I have had this meal many occasions, but this time was so very disappointing. The serving staff inquired on clearing and mentioned it to the chef. No further action occurred. This steak was exceptional, as were the Tasmanian potatoes that accompanied the meal! This island is potato heaven!
As a yes, you guessed it ALL. Accor Patinum member of some years, I’d rank this meal as a “B” - all last week at Sofitel in Adelaide was excellent at Garçon Bleu: and the food at Miss M in Movenpick is very well managed.
Last night’s dining for four was excellent, but little things like being asked for still or sparkling water that was not delivered without my guest prompting were an example of no ready follow-through. Sonny came to the rescue, being attentive and on the ball with refills. The fish of the day was perfectly cooked, as was the slow-cooked beef short rib. This meal rescued the earlier muddledness. The presentation of all dishes surpassed expectations.

Read moreOur 7:15 pm booking wasn’t seated until 7:47 pm, with no follow-up despite being told, “give us 10 minutes.” After waiting in our room for an update, we eventually had to go back down to check ourselves. This lack of communication set a poor tone for the evening.
Service, while friendly, was slow and inconsistent, with staff appearing overwhelmed. Wines arrived well before food, meaning they were often finished before the dishes they were meant to complement. The second course was delayed to the point that a waiter acknowledged the issue and brought an extra glass of wine—presumably as compensation, though this wasn’t clearly stated. Additionally, key menu knowledge was lacking; the staff weren’t sure if the tasting menu, a major feature, could be adapted for a seafood allergy. While this was quickly checked, it felt like something they should have known.
The food was hit-and-miss. The crumbed cheese was delicious when hot but became dry and unpleasant as it cooled. The courgette and preserved lemon risotto was overwhelmingly lemon-heavy, and the prosciutto and melon had so much melon that it lost its balance, feeling more like a breakfast dish. The Pork Milanese was elevated by a fantastic side salad, but without it, the dish would have been quite ordinary. Desserts were enjoyable, though the pairing of the Frogmore Creek iced Riesling made them overwhelmingly sweet.
Ambience was another issue—the noise levels were excessive, with my Apple Watch triggering multiple high decibel alerts. The hard surfaces create a lot of reflected noise, something that could easily be mitigated with soft furnishings or acoustic panels.
Other tables faced similar service issues—one received the wrong bill, another waited 15 minutes after being seated with no service, and a third had to follow up on a forgotten request.
The saving grace of the night (beyond the fact that I didn't have to pay full price for the aforementioned meal as an Accor Plus member), was meeting Lyndon and Wendy, a wonderful couple who generously shared their Tasmania travel tips—thank you both! I'll be sure to explore the caves you mentioned and safe travels for the rest of your journey.
