Normally I would rate the Proprietor 5 stars, I recommend it to all my friends and name it my favorite place to eat in Albury!! However I had a rather disappointing experience today.. I have been going here for years now, I love most things on the menu however I can never bring myself to pass up the one of a kind honeycomb waffles with bananas and maple syrup. As I looked over the menu, I was shocked to discover that the waffles had vanished! After talking to staff members I was informed that they are no longer on the menu and I was forced to order the new alternate waffles with strawberries and cream.. which have also had a price change from $15 to $17 I might add! Considering the Proprietor is basically the only place in Albury that sells waffles, I am shocked that they would remove this unique dish from their menu which helped them stand out from the other local competition. Busy little cafe in a nice part of Albury. Lots of seating available and friendly staff. Menu full of lots of choices reasonably priced. Coffee of good ilk (Padre) but the barista on the day didn't do the blend the justice it deserves.

Perhaps the issue I think I had was the menu almost had too much on it which caused a bit of backup in the kitchen. Our food and coffee was able to be ordered promptly and delivered quite quickly, but we couldn't help but overhear three other tables with some type of timing complaint.

The staff on were doing a great job and the cafe was heaving with only one or two tables free and a line of people waiting to collect their takeaways, so maybe I was just experiencing the peak Sunday brekky trade and there was a slight lag in the kitchen.

I would go back as there were some other interesting things on the menu and it's fairly convenient to get to off the highway on the...

Walked in for brunch at an admittedly busy time of the day. When being seated, I asked whether it would be possible to have a seat outside as it was quite loud within the café itself. However, I was told that they were already too busy and that it would be better if we just sat where he put us. Paired with a clearly disgruntled attitude by staff, the interaction itself was not a nice one.

Now, this would have been okay had we been treated like patrons following this. However, we proceeded to wait 30 minutes to have our order taken while three other tables that were seated after us had their order taken and food delivered. We were constantly ignored by staff even though we were the only one with menus waiting to order.

Couldn’t sit through anymore so we left to have brunch elsewhere. While I can’t attest for the food, the service...

Pretentious. This café is *so trendy* it only needs ambiguous signage. Sitting on a corner you can still shoot through the intersection an miss this place... perhaps that might be a good thing? Though the service is good;  attentive staff, and the decor is pleasant enough, The Proprietor lacks pizzazz. Mainly attracts young metro college and upmarket crowd. Big share tables/ 1970s eatery style plus some smaller tables. Ambient non-descript music. Food was basic/ trying too hard- interesting menu but brioche pulled pork roll was missing a punchy element  (needs fresh coriander or hit of wasabi or spring onions). Tasted a bit bland with the sweet bun and mild dressing. What a shame. Coffee was excellent (Padre) however. 3.5 stars.

Firstly I have to commend this place trying to provide a modern cafe experience in Albury. Other than that it wasn't a good experience. Perhaps I was so disappointed because this cafe receives such high ratings. I ordered a cold brew coffee and it tasted like it had been sitting around a couple of days too long. The pork belly eggs had thin bits of dry reheated pork with chewy crackling. The pulled pork brioche was underwhelming and tasted unbalanced without any real flavour. Sadly I left disappointed and do not recommend it
