Preus showcases the best of Belgium on a plate, though with a few minor caveats. Our dinner for four was a culinary journey with highlights. The sashimi appetizer was a refreshing explosion of flavor. Although not a mushroom fan, my dietary restriction was met with a creative and delicious alternative. We had one of the best meals of our lives at Preus in Bruges. We were told by our host that this restaurant was begun by a chef, Jelle Hinderyckx, that used to have a restaurant with Michelin stars. It’s clear his new restaurant is well on its way to getting a Michelin rating as well. Some highlights include an exquisitely fresh Seabass, superbly cooked and placed atop a mussel risotto. It’s hard to describe how melt-in-the mouth delicious this dish was. The portions were generous, and I ate the whole thing. My husband had a perfectly cooked duck with shallots and green beans. Our dessert was a simple vanilla ice cream with chocolate sauce, but you have never tasted vanilla ice cream like this, and the chocolate sauce was to die for. This is possibly the best restaurant we have ever experienced . It is rare to find a restaurant that thinks of every minor detail. The wonderful relaxing fresh interior adds to the whole experience. Front of house is so knowledgeable and their passion for what this restaurant is doing is commendable . The food is the best we have experienced.
