Walking into Chamber on a bustling Saturday night, one is immediately enveloped by the vibrant energy that defines this high-end culinary gem in Vancouver. Despite its busyness, the restaurant exudes an air of warmth and sophistication, setting the stage for what was to be an unforgettable dining experience.
Our evening began with a shared starter, Les Charcuteries, a thoughtfully curated selection of cured meats, pork rillettes, piccalilli, and grilled sourdough, designed for four. This ensemble of flavors was not just a starter; it was a celebration of craftsmanship and tradition, setting a high bar for the courses that followed.
My choice for the evening, La Brochette De Boeuf, was a testament to the chef's prowess in elevating classic dishes with a modern twist. The grilled 8oz free-range hanger steak was cooked to perfection, its succulence complemented by the smooth, rich celeriac purée and the earthy tones of the black trumpet jus. The addition of pine nuts and frisée added a delightful crunch and freshness, rounding out the dish beautifully.
Across the table, my friend indulged in the Duck confit, accompanied by ricotta & goat cheese gnocchi, a celery & hazelnut salad, and shaved green apple. This dish was a symphony of textures and flavors, marrying the decadence of duck confit with the lightness of the accompanying elements in a way that was both innovative and deeply satisfying.
The culinary journey was accompanied by two Negronis, mixed with a precision that could only be described as artistry in a glass. Their balance of bitterness and sweetness was the perfect complement to the meal, enhancing the overall dining experience.
What truly set Chamber apart, beyond its exceptional culinary offerings, was the attentive and friendly staff. Despite the restaurant's evident popularity, we were made to feel like the center of their world, a testament to their commitment to service excellence.
Chamber, with its fusion of impeccable cuisine, an inviting atmosphere, and unmatched service, has once again affirmed its place on my list of must-visit restaurants in Vancouver. It's a place where each visit feels like a new discovery, a testament to the dynamic and evolving nature of its menu and the creativity of its chef. For anyone seeking an evening of culinary delight, Chamber promises not just a meal but an experience—a promise it delivers on with remarkable consistency.
I've been here before, and I'll certainly return, eager to uncover new tastes and moments as compelling as those Chamber has already provided. It stands not just as a restaurant, but as a beacon of culinary excellence in Vancouver's vibrant...
Read moreAs someone who values the full dining experience over the fleeting moment of a photo, my husband, daughter, and I have become regulars at Chambar. We love it for its consistently outstanding food and impeccable service, and our most recent visit, to celebrate my daughter's birthday, solidified its place as a top-tier special occasion spot. The staff truly spoiled her, making the evening phenomenal from start to finish.
The hospitality at Chambar is exceptional. The staff is consistently outgoing, informative, and genuinely nice. They are incredibly attentive to details, especially when it comes to allergies. We were particularly impressed by how they reviewed each dish upon arrival to confirm its safety regarding a nut allergy—a simple but highly appreciated gesture that speaks volumes about their care.
We chose to explore a wide range of dishes. My daughter went with the Apprentice Dinner, and the kitchen generously sent out ahi tuna appetizers for everyone in addition to our own orders. The ahi tuna was great, and we also thoroughly enjoyed the pickled lime and squash toast. My daughter loved her Melon soup, though she felt the large slice of melon was an unnecessary addition.
The sablefish was perfectly prepared, although it could have benefited from a bit more crispiness on the skin. The real showstopper, however, was the sweet potato bread pudding—an absolute knockout that was rich and amazing, though the pisco sorbet was a bit too sour. A horchata ice gelato might have been a more harmonious pairing.
My husband and I started with the jerk shrimp, which was perfectly cooked and simply amazing. The baked goat cheese with bread was so good I couldn't stop eating it, and the macerated strawberry salad with pesto was a delightful and unexpected surprise. We split the New York strip, which was perfectly cooked to a medium-rare. With all the food we ordered and shared, we simply couldn't finish it all.
Dining at Chambar is always a treat, especially brunch, and this special occasion visit was no exception. It's a place where the atmosphere is as memorable as the food. I wholeheartedly recommend it, especially if you're looking to celebrate a...
Read moreHad a fantastic experience here for my birthday. The food was absolutely amazing. Every bite was jam packed with flavour. The "Le Boeuf" dish was a great starter to start up your appetite. The candied morels in the dish were a great sweetness to go with the hanger steak. The mussels a la Congalise were a must have, I would definitely recommend getting their grilled sour dough to soak up the lovely soup. The Tajine lamb shank main was explosive with flavour. It was a wide medley of flavours, with quite a few sweet elements to it, but it was a great balanced dish. It was further improved with the harrisa and raita option which is absolutely necessary to the dish in my opinion.
In regards to service the folks at the host stand they were very accommodating, as we had arrived for our reservation nearly 30 minutes too early. We were able to get seated right away which was fantastic. Although this was due to a table being available anyways.
Our server Alicja was an absolute gem. She was very attentive and well versed in the menu. Her advice on portion sizing would have been well received if only the menu looked less appetizing. She recommended a glass of wine to go with my main dish which paired perfectly. A small speed bump to the whole experience was a small delay between our appetizers and mains. She amended the situation with free biscuits and chocolates at the end of the meal (biscuits and chocolate will fix just about any mistake or problem, but I am low maintenance).
Overall the experience was great. Sure it was not picture perfect, but a mistake is no longer a mistake when it is corrected. I very much look forward to coming here in the future. And I would recommend it to everyone else in the...
