Solid 4 stars, very authentic porridge (congee), unpretentious ambience. Can order the you tiao (dough fritters) for the "complete" breakfast experience, but imo it's not the best (you can skip the bee hoon as well).
Congee texture is watery-smooth - some people like it this way, but I prefer those that have a bit more rice and stirred to a watery-gooey-smooth consistency. Taste is pretty good, savoury enough for me to not add anymore soy sauce, not salty enough for the wife to start nagging about high blood pressure and potential loss of hair.
Wife ordered the 瘦肉 (lean meat), which was served in shredded form. This is becoming quite rare because many places, in HK and overseas, serve sliced pork - my grandmother said the practice resulted from stall owners being accused of serving sub-quality meats; serving sliced meat allowed the customer to "see" the cut of meat.
I ordered the 猪肝 (pork liver) because it's supposed to be famous. I don't really like liver because many places don't seem to know how to marinate it well, and worse, overcook them. This one, however, is really quite good. Like, seriously, seriously good. The liver was properly cooked, tender, and there's a fragrant distinct whiff of alcohol mixed in with the soy sauce-based marinade. The liver is fresh, with no oozing blood or the horrible stale iron taste. If I ever have a craving for porridge, I will consider travelling back here for it.
We tried the fried fish cake as well, just for fun. The wife likes the taste; I thought it was ok - the texture reminds me of those chewy Malay/Peranakan tapioca dessert-cakes - which is a bit odd as an accompaniment to porridge. There were three of us: me, my wife, and our daughter. My daughter and I don't normally eat breakfast so we ordered one large bowl of fish and beef congee, along with a side of fish cakes and one chinese doughnut. The lady said that wasn't enough food and told us to order another congee. We replied by telling her that we don't normally eat that early in the morning. She insisted and even told us that one bowl was not enough for us. We gave in and ordered a congee with preserved egg and pork.
While we waited for our food, we scanned all signs and menus but did not see a per person minimum. Anyways, the food comes out and the portions are huge. We barely ate half of each bowl. We really try hard not to waste food, but didn't have a choice this time.

You have to get up very early for the best congee. They open at 06:30, but they start preparing the congee at midnight, so when it opens, you can already smell the hot and steamy, and familiar aroma.
They offer a WIDE range of combinations for the congee, from the basic pig ingredients to different kinds of meat balls and beef, and I could say, all fusion well with the congee base. Most importantly is, you could choose whatever combinations you like to mix your own sweet or savory favor.
Speaking of good congee, what makes this shop famous is how the congee is cooked. The smoothness and how the rices blended will give you a suprise. Oh the soy sauce they serve on side is one of the key to make the congee ingredients more tasty.
