I cannot say I expected to have great sushi in Prague, but here I am.
First, I would like to call out that just because the sushi chef was not Japanese, it does not signify that their food is inauthentic or worse off. We had very enjoyable sushi as well as dishes like, Tsukemono and pork belly.
For the sushi, the amaebi was well executed, with both the nigiri and the fried head. Their sea bass sushi had a wonderful combination of flavors as both a maki and nigiri. The pickled ginger was only ok, but other pickles were fantastic! I would also like to point out their use of authentic wasabi, which is a further sign of their quality.
For the pork belly, there was a spicy mustard sauce that added an enjoyable intensity to the savory and rich broth the meat was served in. Everything about the dish, the meat, the eggplant, the peas, were cooked to an optimal tenderness. A small room for improvement would be the rice, where they used a wonderful short grain rice with furikake, but the rice was a bit overdone, a bit too soggy and soft, causing the rice to lose some of the expected texture.
Last of all, their service was fantastic. Their team was well coordinated, and every person added to the experience with pleasant interactions and genuine kindness. The waiters are very attentive, at times maybe too much, when they refill your bottle every few minutes, so it can become a little awkward during a business meeting.
The sashimi was quite nice, unfortunately, the same cannot be said about the lunch menu, which was just bad from start to finish. Soggy tempura, overcooked rice, chewy and tasteless meat, all topped with the dessert: tofu with strawberry jam, which sadly tastes exactly as you would expect. A complimentary japanese tea is included in the menu, unfortunately, when you see the waiter pouring it from a plastic bottle, it kind of cheapens the whole experience.
If nothing else, the quality of the fish definitely ranks among the best in the capital. So if you visit, I would recommend you to try their sushi, which is what I will do...
