The ordering process may strike first-timers as a little unconventional, but it’s easy once you get the hang of it. Here are the steps: Go to the cabinet with a glass door for a light-gray plastic bowl and a pair of tongs. Go along the tiered shelves with tens of trays of vegetables, meat products and seafood, transfer your choices with tongs into the bowl. Have your bowl weighed at the cashier, which is set up at the very back of the restaurant space. Pick a method in which you’d like the ingredients in the bowl to be cooked up. Essentially, you are picking one broth out of a handful of options, ranging from spicy to mild. There’s also the option of having your food served as a dry platter. The price of your main course will be determined by the weight and the cooking method. Pick your sides and drinks. Pay for the sum total. Get a beeper, sit down and wait. When the beeper rings and vibrates, go to the cashier area to pick up your tray.
This style of dining is popular in the Sichuan province of China and beyond mainly for how straightforward and transparent it is. It caters well to single diners or small groups of people who want a broad variety of food without ordering up a big round table of 25 courses/dishes.
