How to enjoy the menu, and understand the choices.

So, basically you have many choices, but let's start with mine, and as a comparison let's list a touchstone pricing:
(**) Ribeye in USA is $13.99 USD per pound (lb) store bought. Here are the equivalents ($0.87 USD per oz, or $3.08 USD per hg).
(1) Finnish Sashi ITA listed at $10.5 Euro per hg (hectogram). That's $2.98 Euro per oz, or $47.62 Euro per lb.
(2) Australian Waygu ITA listed at $18 Euro per hg (hectogram). That’s $5.10 Euro per oz, or $81.65 Euro per lb.
(3) Japanese Waygu ITA listed at $40 Euro per hg (hectogram). That's $11.34 Euro per oz, or $181.44 Euro per lb.
When presented with the steaks: 1. Ask, "how much does it weigh?" (Quanto pesa?) 2. And, "How much does it cost?" (Quanto costa?)
When presented with the receipt, the numbers beside items on receipt represents the number ordered, however the number beside steak choice represents the # of hg (hectograms). Remember, 1 hg hectogram, is equivalent to 0.22 pounds lbs, or 3.5274 ounces oz.
Conclusion my finally bill was $551 Euros, with a final transaction showing $602.02 USD. Here’s the breakdown by line item:
(1) 1 Acqua Gassata (sparkling water) $3.50 Euro
(2) 3 x$3 Coperto Charge equaling $9 Euro total (non-negotiable standard charge for cutlery, napkin, tablecloth, and bread)
(3) 1 BICC - Sauvignon at $10 Euro. BICC or "bicchiere," which is Italian for "glass." On a receipt, "bicc" could be an abbreviated form of "bicchiere di vino" (glass of wine), indicating you were charged for wine by the glass rather than by the bottle. (So, usually there's 5x glasses in a bottle. So, have a pretty good idea what a bottle would cost, in this case $50 Euro/bottle).

Read moreWe ordered a Bistecca alla Fiorentina. From the moment we sat down and ordered a bottle of wine. We felt that we were being up sold by the server and then again when we were picking our steak, they continued to try to upsell us. We did decide on the most expensive piece of meat, and then when they brought it out for us to see, they brought out a 1.9 kg steak for two people!! It was simply too massive for two people to eat and the fact that they were expecting us to accept that steak was a little ridiculous. Especially the way we showed concern for the size and the excuses rE received about the bone being heavy, etc… He kept on trying to sell explaining how tender and juicy it will be, and that this is what a Fiorentina steak is. We maintained that it was too big and we would never eat it all. Offered to pick another restaurant if they wouldn’t find a smaller cut for us.
Eventually, the server did return with a much more reasonable cut that was 1.3 kg and we accepted that steak.
Few moments later, when it arrived back to the table, everything turned around because it was absolutely delicious and perfectly cooked. I recommend having the server season the steak for you. They did absolutely wonderful and put the smiles back on our faces.
We felt that because of the location, it’s possible that they do try to push larger cuts of meat so that they can charge more and more expensive bottles of wine to certain tourists. The steak I cook from Walmart back home is better. I was sold from the start. The atmosphere, the reviews, the pictures, I was in and executed for my florentine steak experience. I was directed to pick out my cut, and chose the Spanish wagyu. I was told “best steak in the world”, “so juicy it just melts”. Etc. all the things you hear about Wagyu. Was presented with the cut prior to cooking. It looked great! Server came out and cut it for me even. Perfect! But… when I bit into it… the center was cold and bits of the steak were tough and stringy like chewing ligament and tissue that hadn’t been cooked long enough to break down. They brought a hot plate out to cook the steak a bit longer, but that didn’t help. Then I was told that it was tough because I used the hot plate too long. There was definitely a language barrier present which isn’t anyone’s fault, but they didn’t understand that I really didn’t enjoy my steak. They tried to correct it by giving me a free limoncello, but that doesn’t correct having to pay over 300 euros for a steak that ain’t as enjoyable as my $12 steak from wal mart.
