I have been to Italy three times, with each trip lasting nearly a month. Even in Italy, you really to have to do your research to find places that prepare pasta with respect and serve it with pride. Gullman could easily stand against many of the restaurants in Italy.
Please note that I did not try more of their fusion or experimental plates, such as kimchi pasta. I am speaking strictly from my experience with the carbonara and pomodoro dishes I had when my wife and I went there twice on separate visits to Kyoto.
There is almost always a line during lunch, but that is a badge of honor and an indication of the quality that awaits within.
