TL;DR - EXCELLENT desserts from a chef who says he doesn’t know how to do pastry (doubtful)
We got very lucky and were the first customers on December 22, during a time when the chef was filling Christmas orders.
Service:
While the chef claimed not to speak English, he was able to talk us through flavor combinations and descriptions of the desserts without issue, as well as the drink menu.
He was very warm, kind, and earnest about his wish to collaborate with others and to bring amazing food and experiences to his customers.
Food:
Incredible. The persimmons dessert had (if I understood correctly, and I may not have) persimmon in a kind of glaze, as well as block cut, aged persimmon in a special sauce, accompanied by roasted almonds, almond ice cream, and a milk foam.
The ice cream and foam were prepared in front of us.
Together, everything was so balanced and flavorful, and every texture was absolutely perfect. This was my favorite of the two desserts we were fortunate enough to try.
The banana tart had young thyme, brown sugar, and custard, with some kirsch. The tart shell was crisp on the outside, giving way to a buttery crumb that blended nicely into the custard and the creaminess of the banana, which in turn was balanced by the brown sugar and young thyme.
I also ordered the limited bean coffee, which was a Tamiru Tadesse Ethiopian light roast, which had a tea-like body, and very fruit-forward notes that I felt deeply complemented the persimmon dessert and went well with the banana dessert.
This was a beautiful experience and all the more special because we had the chance to chat with the chef and learn a little about his approach to desserts and his dream.
This is not a quick experience, but it is a demonstration of a singular vision and clearly, mastery of craft.
If I could, I would visit Harmonika regularly, and I envy the Kyoto residents who can do so. If you are in the area, I highly recommend that you stop in and check out Harmonika.

Read moreThis place is nothing but spectacular. It may take a second to find, but it is definitely worth it. We went there for dessert and some drinks, and the place was spectacular.
To begin, the place itself is very modern and nicely put together. You can tell the owner is very particular and takes pride in his space. We were seated at the bar where he prepared every dish and drink right in front of you. It is that much more spectacular when you realize it is a one man show. He is extremely welcoming and does very well explaining the food/drinks albeit a language barrier.
As for the food, I had a banana tart. It was extremely favorable and not overbearingly sweet. The whiskey was great as well. I did not have much else, except for the cheese (which was also fantastic). But by the looks of things, every other dish he prepared looked amazing. He took so much time with each dish and the precision was immaculate.
There is no surprise this place has been able to maintain its 5 star rating through its 6 months of being open. The owner is an amazing guy as well. If I was in Kyoto longer, it would be a no-brainer to go back. Highly recommend for anyone who has the time and inkling for some...
