山間部に流れる豊かな清水。火山灰の堆積のない滋養に富んだ土。高温多湿で昼夜の気温差が激しい気候。そして1年を通じ、丹精込めて稲に愛情を注ぐ人。すべてにおいしいお米を育てる条件を揃えた、新潟県長岡の厳選米。契約店より毎日精米仕立ての寅福オリジナル米が届きます。ほんのりと甘い味と香り、ふっくらとした柔らかさと上質な粘りをご賞味ください。
大竃
どうしても旨いご飯にこだわりたい。そうするとやはり石竃で釜炊きするに限ります。百五十キロの大竃で三升炊きの火力で二升の米をゆっくり炊く。これがお米をつぶさずふっくら炊くコツです。また鉄釜の鉄分がお米の旨み成分と相まり、なんとも懐かしいご飯の味を引き出してくれます。
飯炊き
飯炊きは、煮る、蒸す、焼くの三段階。初めのチョロチョロは米粒の中をアルファ化するためにゆっくり加熱します。その後一気に温度を上げて中パッパ。この中パッパが弱いと米粒の間にすき間ができず、ご飯がふっくらしません。次は蒸らし。保温性の高い竃が釜をすっぽり包み込んで熾き火状態で充分に蒸します。最後は焼く。昔なら藁をひとくべして火を強くしたもの。ほんのり焦げ口がついた香ばしいご飯の出来上がりです。

I don’t recommend this restaurant because they didn’t call our names when we make lines. Wrote name on the list and waited for approx. 20 minutes. I don’t expect full service experience but waiters are not well-trained and I was...

Great place in Namba Parks for Sushi and Sushi of great freshness and quality. Nice decor and service . Great selection of other Japanese dishes and Sake . Menu in English with pictures is ideal....
