The set is designed to be enjoyed in four stages—first on its own, then with wasabi, green onion, and seaweed; third with a rich raw egg yolk; and finally as ochazuke with hot broth. Each style brings out a different, delicious aspect of the dish. The interior is serene and elegant, making it a great escape from the bustle of Ginza. There was no wait at all for peak lunch hours and location was so close to Tsukiji market. This restaurant served the best unagi I have had. The service was great and server was able to explain how to eat hitsumabushi the proper way. The food came out quick and accompanied with several side dishes including grilled unagi, chopped leek, wasabi, egg and with side of soup. The server checked offered free refills of tea and dashi and was incredibly kind and respectful. The portions were very filling and very affordable price.
