There are not enough words to describe how incredible this place is. The sake, doburoku and beer selection are extensive and you could find literally anything you want on this menu. We tried their award winning sake, the same version that finishes with green apples; two doburoku - standard and one year aged, sparking sake and the seasonal red rice sake. We were astounded. Everything was exceptional.
I was even more astounded by the two incredible women working the bar. The bar was full, they served everyone with a smile on their faces AND made all the food to order. They engaged us in English (they were so generous and kind with our lack of Japanese) and went out of their way to ensure we knew what we were drinking and were taken care of. I didn't know what DOBUROKU was and didn't fully understand the process but after visiting Heiwa DOBUROKU Kabutocho I now better understand the process and can better appreciate the flavors! The rice remaining in the DOBUROKU was a little different for me however I was able to appreciate the flavor of each tasting I tried. The 1 yr aged was my favorite. In addition their snack pairings went very well with the drinks. I finished with 2 beers which were also very good and ramen which was made right there. I definitely recommend Heiwa DOBUROKU Kabutocho if you like understanding how things are made and appreciate seeing the process...
Read moresadly doburoku is very hard to find in japan. i had a good time trying everything made here. the basil and white koji were the best. the servers answered all of my annoying questions and after a while i hope we had a fun time talking. i wonder if one day there will be an option that is plain, unwatered-down, and moderately aged, but maybe there's no benefit to ageing doburoku? i know that other (loosely) unfiltered rice alcohols benefit from ageing (after the grains of rice have been removed). i will be back if i can go next time im in tokyo! i wish it were possible to take out smaller sizes of any drink because a big glass bottle was too cumbersome for...
