I was recommended this by the hotel concierge for a good quick bite for sushi.
Located inside Parco-ya on the higher floor. It is a conveyor belt sushi joint that uses it's conveyor belt for advertising. All sushi was freshly made on demand.
The fish was very fresh and they had an interesting selection. As they were selling fish from Kanazawa, they offered their Kanazawa special soy sauce. I like the ordering system via the ipad. They had an English menu. I was able to select with or with wasabi, regular rice or less rice portion. I spent almost 6000¥ for 13 pieces of sushi. The pricing is a conveyor belt style where they chip the plates and the waitress comes around to scan the stack and charge you accordingly. The gold plate was the most expensive at 1000+¥. And the cheapest was closer to 200+¥.
At 10 50am, I was number 17 on the queue ticket. I was seated quickly by the counter. Even though I was alone, they sat me in a 2 person partition booth so I had plenty of room. By the time I left at 11.30 am, there was long line of local professionals out the door.

Read moreLocated on the 6th floor of a department store, this is a very popular conveyor belt sushi restaurant (based on the fact that a lot of locals don't mind waiting 60+ minutes to eat here). We waited about 70 minutes when we arrived around 17:20pm on a Sunday.
There is a ticket machine where you have to indicate no. of guests, select "counter" or "table seating" or "both" and then you get a number for your turn. You can select to be notified by phone when it's your turn so you can shop while waiting. When they call your number, you have 10 minutes to respond before they give away the seats.
The conveyor belt wasn't used this time to distribute sushi, it was a-la-carte ordering via a tablet and you get your sushi from the chef responsible for your table.

After registering our group size (2) on the iPad out front, after a few minutes of waiting we were given a table at the counter. Here, we could watch the chefs selecting fish cuts, make ourselves hot green tea, and order dishes from the iPad.
Each "group" is separated by a plastic transparent barrier, so you can use their dishes for inspiration if needed whilst still having your own private space. Dishes are typically passed directly from the chefs in front of you, or sometimes via a waiter behind you, but there's no conveyer belt we could see.
