I have been going to this restaurant since it opened. At one point it was wonderful. Now it is not, if tonight's experience is anything to go by.
Hungry on my way home, I went it an ordered a glass of house white and a Bismarck Pizza. The wine was good, well structured and astringent. The pizza was a mess; a surprise. First of all, the "soft boiled egg" was a hardened smear on the pizza. It was obviously not soft boiled, but cooked on the pizza in the oven for too long, and spoiled.
After that came the rest of pizza's ingredients. Chief among these was "truffle cream". I am not an idiot, I like truffles, but this just overwhelmed everything else. The small portions of ham (of some sort) mushrooms and whatever else were completely overshadowed. The menu also mentioned black pepper, but that was missing in action and had no impact whatoseover on the taste profile. The truffle flavor was so strong that, after leaving the restaurant, I had to buy a beer to flush away the lingering aftertaste.
The staff were great and friendly. They offered to remake my pizza when I pointed out the problem with the egg, but I didn't want to waste food and said it was okay. Sadly, it wasn't. But the situation should never have arisen in the first place, the pizzaioli should not know how to make the pizzas on their menu.
Salvatore used to be a really good place, and I have enjoyed their Bismarck and other pizzas on countless occasions, but tonight was bad enough for me to come home...

It was cold and had 4 tiny pieces of broccoli. We ordered the seafood pasta which was tasty but not outstanding. Best thing was the margherita pizza. Tasty crust. Not much cheese but not bad. Last thing I received were the stewed ribs. Good size portion. Not bad but not marinated long enough for the seasoning to penetrate deep into the meat. Disappointing for Japan. I wouldn’t go there again honestly. By the way the red wine was very acidic. I had Gastro reflux the rest of the night. Sorry for the bad review. The concierge suggested it. The pizza dough lacked crispiness, and the tomato sauce was more of a watery puree sitting on a chewy base. Additionally, when it came time to pay, several unexpected extra charges were added. I suspect this may have been because I’m a tourist—though I take responsibility for placing my trust too easily. The receipt was only provided after payment, so I didn’t notice the details until I got home. Drinks were 100 yen more expensive than listed, and I was charged an additional 660 yen just for cutlery.
