Ich habe ueberlegt ob man dem Restaurant 3 Sterne geben kann wegen der Qualitaet der Zutaten und der handwerklich soliden Leistung, aber in Anbetracht der Erwartungen, des Service, des Ambientes und des preises waere das nicht gerechtfertigt. Nein, das Sushi war nicht schlecht, einige Stuecke sogar exzellent, aber in Anbetracht des Preises und der allgemeinen Qualitaet in Tokio stimmt hier einfach nichts. Das Ambiente ist kalt und schon eher primitiv. Ich verstehe dass man versucht hat das Restaurant ansatzweise wie ein kleines traditionelles Sushi Restaurant aus der Edo Periode aussehen zu lassen. Aber es ist nunmal kein traditionelles Restaurant welches die Jahrzehnte ueberdauert hat sondern eben ein Resturant in einem modernen Hotel. Es fuehlt sich an als haette jemand versucht ein restaurant zu designen der eigentlich lieber einen Washitsu gehabt haette. Mir fehlt der rote Faden im Design, das Ambiente wirkt deplatziert und kuenstlich. Ich mag es zu Hause einen Washitsu zu haben, ich mag auch "einfache" Restaurants aber in dieser Kombination wirkt es schon beinahe primitiv. Die Sitzordnung waere in einem Fliessband Sushi oder einem uralten Laden angemessen bei der man weiss dass sie den architektonischen Bedingungen vor 80 Jahren oder einer Massenabfertigung als Fast Food Laden geschuldet sind - hier jedoch wirkt es deplatziert und enttaeuschend. Vielleicht war der Gedankengang auch die Aufmerksamkeit von der Umgebung hin zum Essen abzulenken - es gibt hier einfach nichts zu schauen. Sushi ist im bereich der Spitzengastronomie vielleicht auch eine Herausforderung weil es mit Beachtung der Traditionellen Gerichte nur bedingt Spielraum fuer Variationen gibt - aber ich habe auch schon Sushi gegessen das von der Praesentation der Speisen wesentlich kreativer war. Dann muss ich zumindest fuer das Mittagsmenue einen Stern geben fuer den Service. Die Bedienung ist kalt und wortkarg, die Speisen werden ohne Ruecksicht auf den Rhythmus der Gaeste gereicht und man hat den Eindruck das Personal moechte die Gaeste so schnell wie moeglich wieder loswerden. Das geht bei einem Restaurant dieser Preisklasse gar nicht! Das wichtigste - und einzige Kriterium fuer die Michelin Sterne - das Essen. Eigentlich geschmacklich hervorragend, die Qualitaet der Zutaten ist auf hoechstem Niveau - allerdings muss man auch sagen dass in Tokio das Niveau allgemein auf Weltklasse ist. Zeigen Sie mir ein Sushi Restaurant in Tokio welches kein Fliessband hat und wirklich schlechtes Sushi macht! Der Aal und die Krabbe waren wirklich herausragend gut und schaffen es sicherlich in die Top 10 der Sushi Restaurants in Tokio. Der Rest war wirklich gehobener Standard und kann bestenfalls durch den interessanten Schnitt und die Groesse der Stuecke hervorstechen. Die langweilige und einfallslose Praesentation kann man als "traditionell" abtun, aber dafuer gehe ich nicht in ein Restaurant mit 2 Michelin Sternen. Geschmacklich habe ich Sushi gegessen welches auf gleichem Nivea lag in einem primitiven Sushi Restaurant gegenueber dem leider nicht mehr existierenden alten Fischmarkt in Tokio. Hier bei Kanesaka war der Preis um Faktor 50 teurer, die Atmosphaere kuehler und das Personal unfreundlicher.

Mein persoenliches Fazit: Leckeres Sushi aber masslos ueberteuert in einer unpraetenzioesen Legebatterie von unfreundlichem Personal unter Zeitdruck serviert. Bisher waren Michelin Sterne fuer mich ein Erlebnis - allerdings eines an das ich mich gerne erinnere. Es gibt ein japanisches Sprichwort - einmal im Leben muss man den Mount Fuji bestiegen haben - ein zweites mal tut es nur ein Narr. Im Falle des Kanesaka kann man aber getrost auf die...

I'm a repeat customer but the chef at counter changes all the time. I always book the last reservation at 1.20pm and complete my meal by about 2.30pm. However in Feb 2023 after ordering their most expensive course set for 2 persons, the chef said we must leave by 2.00pm! So they rushed us thru the meal & exactly at 2.00pm they presented the bill to us without us asking for it & while we were still eating the last pieces of sushi & soup. Then they brought our coats to the counter, again without us asking for them & before we could even finish eating nor having paid the bill! The bill was an astronomical Yen 38,000 for lunch for 2 that lasted less than 40mins. You would think that for that amount, the restaurant would have extended the highest courtesy in service to us. On the way out I immediately cancelled the next reservation which I had previously booked in advance. I will never go back to this restaurant again. The arrogance & poor service is unbefitting for a sushi restaurant of this level...the restaurant is never full & you would think post covid they should welcome such high...

It just disgusted me.. sashimi cut was inconsistent, speed was way too fast in the beginning and we had to let chef to slow down which he did later. Other chef was laughing and giggling so loud (louder than customers) and we couldn't enjoy our dinner. Customers are expecting a lot when restaurants get two Michelin stars. Ambience, service and food have to be on point, especially when customers pay $$$. I personally don't think sushi kanesaka deserves two.. not even one Michelin star. It was the worst omakase I have ever had and was...

Food, the sushi is outstanding. Perhaps some of the best bites of food I have ever had. If traditional nigiri sushi is what you want, you will find that here. The staff and the sushi chefs are not very friendly however. They certainly were skilled but the overall vibe of the restaurant felt cold and unfriendly. Probably the least enjoyable 2+ star michelin restaurant I have ever experienced. Generally places with even one michelin star makes you feel very welcome and comfortable. The food was definitely 2 star caliber. But felt rather like they were doing us a big favor to even let us try their food. It was probably just in my imagination, but I did not feel welcome there.
