Straight 5/5. This is a no frills, industrial ramen shop that is slinging hot bowls of tonkotsu style greatness.

Food - rich, bold, full of flavor. Order at the machine. Get the special bowl. It comes with everything you want, nothing you do not. Add an egg. They are a nice soft boil with great soy marinade flavor, so you will want more than one. PRO TIP - eat the noodles and save some of the broth. You can ask for another serving of noodles for FREE! The noodles have a nice chew. The chashu is fatty and fall apart tender. Add in the ginger to cut some of the richness of the bowl.

Service - They are so efficient. There may be a line but this is a place for the locals. They are there to eat and get on with their day. We ordered, and we sat down for maybe 5 mins and already got our bowl. Ask the server for extra noodles if you are still hungry.

Atmosphere - This is a shop for the local salary man. Lunch hour is nothing but suits, ready to eat and go back to the office. You are literally elbow to elbow, but that is the charm of eating with the locals. They are not there to cater to one time guest's special needs. You get what is on the menu. They are there for the local salary man who is the core of their demographic.

Hands down one of, if not my favorite ramen shop. People are there...

Yamachan was open late and the photos on Google Reviews of a clear tonkotsu broth sold me…

ATMOSPHERE: I didn’t count the seats but it’s small, maybe 15 can fit inside the simple shop. I didn’t care for the air conditioner blowing on my hot ramen though.

FOOD: Hakatamori Vince, wanting to have tonkotsu broth? What the… The pictures did do it justice as I saw no milkiness but a transparent tan. I guess you could say I’m into tonkotsu assari broths! Not heavy, savory, very flavorful with subtle fish notes. Even the thin white noodles that we’re not fans of were good. An orange mound of what looked like tobiko was crystallized ginger. I added bean sprouts to the included wood ear mushrooms, chashu, gooey egg, green onions and nori.

SERVICE: Order on the kiosk (cash only), hand in your ticket and sit anywhere. The worker was friendly and assisted us at the kiosk which didn’t have full English translation.

OVERALL: Definitely going to be sad going back to Maui with our pathetic...

The flavors were in good balance and the dish was rich and satisfying. Pepper, oil, sesame seeds, ginger and a chili-pickle-paste are free to adjust the flavor to ones liking. The price is absolutely fair and worth every penny. It is exceptional good value for money. The dish is made to order and ready pretty quickly. One has to order at a machine at the entrance, which at first I didn’t see and the waiter came over immediately to assist me with the process. All the choices are basically tonkotsu ramen (pork bone broth) with different toppings. One could also take the basic broth + noodles and add some toppings individually, if wanting to make a different selection than suggested. the machine only accepts EC/Suica or Cash (no credit cards). The interior is charmingly minimalistic, to me, it is a great...

Really nice that the table offers free mustard greens, sesame seeds, white pepper, picked ginger, and I think soy sauce. Service is kind, fast, and friendly. The atmosphere is casual.
