Manam After the Hype
I recently had the opportunity to eat here. I specifically avoided Manam when it opened because the line was always long. After the hype, I finally went there to try it out.
Atmosphere At first glance, the place doesn't look too enticing because it's practically dining in an almost open space in SM Clark. You might end up getting seated outside the resto which I did end up in. No ideal.
The Food We went for sisig and bulalo. I was particularly intrigued by the sisig because I've read a lot of good reviews about it. And well... If you're Kapampangan, don't order it. It's not good. They put chicharon which is okay but the chicharon on my order was NOT CRUNCHY. It was tough, not even chewy. Their sisig contains a white liquid which I'm assuming is mayonnaise. Also, there is no liver to balance out saltiness and sourness. I'm not sure what meat they used. I can't find the chew from pork ears. It was also overpowered by the sourness of the mayo. For sisig, I would prefer to taste the meat, not the condiment.
The bulalo was okay. The beef was tasty. The beef flavor was imparted in the soup. It was not particularly tender. I would prefer the beef meat to fall from the bone. I did like that the soup was not too salty which a lot of restaurants tend to do. I would wish they'd add more and bigger potatoes. We only had 1 itsy bitsy potato. What's up with that?
We ordered shakes too. I forgot the names but one had Buko Pandan and the other was Mango Suha. The buko variant was pretty good. I like that the shaved ice was smooth. Buko pandan is a "safe" choice for a shake I guess. The mango suha was a miss though. The mango flavor didn't incorporate with the ice. The suha was just bits of suha on top. I'm not sure if they even blended the fruit in the shake. If they did, I wasn't able to taste it.
Service I think Manam shines in terms of service. The staff was very polite and quick on their feet. It looks like they were well trained. Kudos to the Manam Team. However, they did miss one order. The lady who took our order correctly checked that we ordered a mango suha shake but when they served the food, they served an ube variant. The promptly changed the shake. Not sure what happened there but I hope it doesn't happen often.
Final Verdict Manam is "okay." Inwould return to try it again but it's not on my reco list yet. I'm very disappointed with the sisig. I was expecting more from this restaurant. The other food choice was so-ao. Maybe I would give Manam a...

Her suggestions were amazing—the food was so good and comforting. It's really a must try dish, she didn't disappoint us! She was so friendly and made us feel so welcome. It was so sweet, savoury and it was paired so well with this slightly sour calamancy flavour. It was perfect! I also got this Shiitake and Tokwa Kare-Kare. Tofu with peanut sauce and some vegetables.
