I'm not a big fan of unlimited hotpot because I prefer quality over quantity. That's why Chairman Fu's restaurant left such a strong impression on me. Not only is the place aesthetically pleasing, but they also serve delicious food with excellent customer service.
Before our meal, we were offered three dipping sauce options: roasted sesame sauce, perfect for meat; sour dipping sauce, ideal for fried dishes; and satay sauce, a versatile option. My favorite was the roasted sesame sauce, which I couldn't get enough of.
I ordered the wild mushroom collagen broth since I love anything mushroom-related. It was heavenly. My friend got the laksa broth, and it turned him into a hotpot enthusiast. It was rich and creamy, and he recommended adding their chili garlic if you like it spicy.
For appetizers, we tried the mala corn ribs, which were the best-tasting corn I've ever had. The smoky flavor was addictive. We also had the salt and pepper fried lobster, tender and flavorful, with a hint of spiciness. The egg fried rice was the perfect base for our assorted balls and meats.
Speaking of meats, we tried the pork ribeye and Australian wagyu brisket. The quality was top-notch, with tender cuts that weren't overly fatty.
We visited in the afternoon, and as the night fell, we ended up having cocktails. They were unique and delicious. The wintermelon highball was like sago gulaman for adults, a pleasant surprise for non-whiskey drinkers. It's green label infused with jasmine tea and wintermelon syrup. We also tried the lotus peak, with gin, osmanthus syrup, and lemon, which had a bit of sourness but was enjoyable.
