Baba, as charming as it seems, leaves a lot to be desired. As a fan of the executive chef, I was waiting impatiently for the restaurant to be open. I've always admired the chef's ability to elevate simple dishes from the Polish cuisine, I think that's precisely what Młoda Polska got right from the get-go. At Baba, we tried the tartar (beef and yeast), the toast with carmelized onions, duck ragu and mushrooms with herb emulsion. The service was stellar, very professional and clearly knowledgable about the wine selection (speaking of which, I have never seen such a big selection of Polish wines in a restaurant). The only minus here was the amount of wines available per glass. The atmosphere of the place was cozy, we quite liked the boxy green furniture and the split into two rooms. Felt like a classy bistro. Now back to the food; the tartar was simply great. The meat was clearly fresh and of high quality with good texture and sauce. We couldn't taste much of the yeast, but that wasn't a problem. The umami toast served with carmelized onions, cheese and broth was where the culinary experience started deteriorating. The bread was fantastic, but the onion combination fell quite flat. The broth was supposed to be umamic, with seaweed notes, but it didn't taste like anything. We were quite happy, though. Excited for the main course, we dug in. Unfortunately, after the first bite, we both realized that the food is simply not good. The duck ragu (a beautifully looking plate) dish tasted like cinnamon toast crunch, the sauce was very sweet and the top tasted like it was sprinkled with sugar. Sweetness is not something you expect from a ragu. Additionally, there was very little duck meat for the price of the dish. So the ragu was a complete miss for us. The vegetarian dish I chose (mushrooms, herb emulsion, potato), was supposed to be sort of a comfort food. I imagined that the mushrooms and potato mash be drenched in the herb emulsion, or a sauce of some kind. The mushrooms (3 different kinds) were presented on a metal spet, with a side of mash. On top there was some cooked kale, with what I think was garlic. This dish was incredibly bland. There were no dominant flavors, no interesting textures, nothing tying the dish together. It felt like a school cantine food. The herb emulsion was more of a decoration, than a part of the dish itself. We finished dinner satisfied with the service, but feeling very meh about the food. Due to my own scheduling mistake, my reservation was not registered in the system, despite having already paid a reservation fee of 100 Polish Zloty. The waiter initially handled the situation with kindness, assuring me that mistakes happen and promising to find a solution for the fee, which gave me a positive first impression of the restaurant’s customer service. The food itself was decent. The croquettes as a starter, the gravlax with yellow beetroot, the Polish meatloaf, and the Baba au Rhum for dessert were all enjoyable. However, for the price, the dishes lacked a certain refinement or a standout flavor that would make them truly memorable. Unfortunately, the experience was tainted by how the reservation fee issue was handled at the end. Despite the waiter’s initial assurance that a solution would be found, I was ultimately told that the fee had expired and could not be deducted from the bill. This lack of transparency was incredibly frustrating, leaving the impression that customer-friendly promises were nothing more than a tactic to keep patrons engaged. The approach seemed more focused on maximizing profits rather than genuine customer service. Overall, this experience significantly affected my perception of the restaurant. While Baba has an inviting atmosphere and a solid culinary offering, the handling of the reservation fee left a negative impression. Bardzo mieszane uczucia po odwiedzinach lokalu. Po wielu wizytach z Młodej Polsce, którą uwielbiam za jakość i oryginalność dań moje oczekiwania były bardzo wygórowane względem tego miejsca.

Na starcie, strona online nie oferuje możliwości rezerwowania stolików większych niż 4 osobowe. Po skontaktowaniu się z restauracją mailowo i prośbą o zwiększenie rezerwacji o dodatkowe osoby uzyskałem odpowiedź, że nie ma takiej możliwości ze względu na rozmiar restauracji. Po przyjściu do lokalu moim oczom ukazała się grupa przy stoliku 6cio osobowym. Czyli jednak się da?

Zaczynając od samego lokalu, który wyglądem i wielkością przypomina raczej małe bistro. Zgodzę się z przedmówcami, że wnętrze jest dość ciasne i siedzi się stolik przy stoliku, a także co chwilę ktoś przechodzi obok lub za plecami. Wystój również wzbudza mieszane uczucia, niby ma być oryginalnie, niby nieszablonowo, ale nie do końca wszystko jest spójne. Ładnie zaprojektowana zielona zabudowa z pięknymi detalami jak np. uchwyty w kształcie raków nie do końca współgra z po prostu brzydką i tanią sklejką z okleiną rodem z szafki kuchennej z gotowej ekspozycji w markecie budowlanym. Miejsce posiada bardzo mało tkanin wewnątrz lokalu co bardzo przekłada się na pogłos i hałas w restauracji, który po pewnym czasie po prostu męczy (ten sam problem dotyczy Młodej Polski). Mało przyjemne oświetlenie, dużo bardziej sprawdziłyby się spotlighty lub po prostu przygaszone oświetlenie z dodatkowymi lampkami bezprzewodowymi rozstawionymi na stołach (koniecznie z ciepłym światłem).

Obsługa bardzo profesjonalna, doskonale zorientowana co się dzieje w karcie dań oraz win. Chętna do pomocy i doglądająca stolika w odpowiednich momentach. Tutaj absolutnie nie mogę się do niczego doczepić.

Kuchnia – i tu zaczyna się największy problem. Karta jest krótka i w miarę prosta natomiast tak jak wspomniała część przedmówców dania są trochę zbyt nijakie, a wielkość porcji w stosunku do ceny jest delikatnie mówiąc nieporozumieniem. Z czterech przystawek chyba najlepiej sprawdziła się „Wołowina i drożdże” czyli po prostu tatar oraz tost z karmelizowaną cebulą i serem, który uratował właśnie ser i dodatkowy bulion umami, który był pyszny. Z dań głównych ragu pozostawia wiele do życzenia, bo to po prostu poszarpane mięso z kaczki, które przykryte jest płachtą makaronu z miejscową posypka z grubo tartej bułki z przyprawami. Nic wyrafinowanego. Największym nieporozumieniem jest natomiast żebro wołowe, a raczej stosunek wielkości dania do ceny. Za 144 zł dostajemy kawałeczek mięsa z dobrym sosem demi glace ale to tylko kilka kęsów mięsa (na dodatek 1/3 kawałka stanowiła warstwa tłuszczu, która była niejadalna). Szanuje skomplikowany proces przygotowania tego dania, o którym opowiedział nam pan kelner natomiast absolutnie nie rekompensuje to totalnie małej porcji.

Deser - baba au rhum – lekko sucha, mało nasączona. Nic nadzwyczajnego. Wina – sporo win naturalnych, dużo win z Polski oraz duża wiedza kelnera na ich temat. Tutaj duży plus.

Podsumowując - dużo hałasu o nic. Skuszony dużym hypem i sentymentem do Młodej Polski miałem bardzo duże oczekiwania w stosunku do tego miejsca, które po zapłaceniu rachunku ponad 900 zł za kolację dla 4 osób pozostawiło jednak spory niesmak. Jak do Młodej Polski zawsze będę chciał wrócić przy nadarzającej się okazji, tak do tego miejsca zdecydowanie nie. Zobaczyłem, zjadłem i odhaczyłem – bez konieczności powtórki. Życzę dużo powodzenia w doszlifowaniu historii i opowieści tego miejsca, bo póki co raczej tej...

Jeśli chodzi o jedzenie to jest naprawdę smaczne, ciekawe i bardo przemyślane? Widać, że ktoś nad tym myśli i ma smak, drinki i koktajle również ciekawe i na bardzo wysokim poziomie, obsługa od wejścia bardzo miła i profesjonalna, co do wystroju ładny, schludny i interesujący, jednak coś w tym miejscu jest takiego, że nie chce się do niego szybko wracać, wrócę po nowe doznania kulinarne ale nie prędko.

The atmosphere is stylish, and the ambiance invites guests to enjoy a relaxed dining experience. My visit, however, started with an unexpected challenge. Due to my own scheduling mistake, my reservation was not registered in the system, despite having already paid a reservation fee of 100 Polish Zloty. The waiter initially handled the situation with kindness, assuring me that mistakes happen and promising to find a solution for the fee, which gave me a positive first impression of the restaurant’s customer service. The food itself was decent. The croquettes as a starter, the gravlax with yellow beetroot, the Polish meatloaf, and the Baba au Rhum for dessert were all enjoyable. However, for the price, the dishes lacked a certain refinement or a standout flavor that would make them truly memorable. Unfortunately, the experience was tainted by how the reservation fee issue was handled at the end. Despite the waiter’s initial assurance that a solution would be found, I was ultimately told that the fee had expired and could not be deducted from the bill. This lack of transparency was incredibly frustrating, leaving the impression that customer-friendly promises were nothing more than a tactic to keep patrons engaged. The approach seemed more focused on maximizing profits rather than genuine customer service. Overall, this experience significantly affected my perception of the restaurant. While Baba has an inviting atmosphere and a solid culinary offering, the handling of the reservation fee left a negative impression. Due to this lack of transparency and the disappointment in customer treatment, I would not return to this restaurant in the future.
