I opted for a medium cone with truffle mayonnaise, spring onion, and arugula—each fry was crispy on the outside, soft inside, and bursting with flavor. I paired it with a refreshing Sagres beer, and the light bitterness perfectly balanced the salty, rich fries. This is Lisbon's take on the gourmet fries (chips) craze taking place in Holland and Belgium these days. All is very simple. You choose your order size (S,M,L) along with sauce preference. They have a few extra toppings you can have as well.
There are a few spots to enjoy your gourmet fries orders inside Potato Project or you can simply do take-away. Orders are placed in sturdy cones which are good for transport so it is easy to walk around and explore the streets worry free of spillage while you enjoy your chips.
During a recent visit, we had a large order with Piri Piri mayonaise and chopped jalapenos. I have to admit, this was better than a similar order at a gourmet fries specialist in Antwerp a couple months ago. The chips were very well fried, tasted good on their own. The piri piri mayo was slightly spicy, jalapenos gave them even more kick. It was a great order, one we'd gladly return to order again....

They advertise the potatoes as being Agria (which is a very delicious and flavorful potato variety)... well, that doesn't help since they use OLD potatoes that already have sprouted, and you can see that when they slice them with the manual potato-chipper, the potatoes have lots of "cleaning" cuts due to the axillary buds . And you can tell they use old potatoes by the taste of them alone, no need to see them. Never had fried potatoes in the Netherlands nor in Belgium that were as soggy and soaked in oil as the ones from Potato Project.
