I am giving this a 5-star review even though I was disappointed that the phở was not what I expected. I could tell that the restaurant was proud of their phở with its noticeably clear broth that I initially felt was lacking in flavor and depth, so I hesitated to write a negative review and do some research first.
I am an American who no longer lives in the US, and I haven't visited a Vietnamese restaurant in a long time. I lived in the Seattle area where phở restaurants are quite common, and my numerous experiences with it were very consistent there, so why was this phở so...different?
It turns out that the popular phở in the US is Saigon phở, and what I was tasting at this restaurant for the first time was Hanoi phở and I didn't know that when I was there. I was expecting the broth to be richer with a thicker mouthfeel to it, and more aromatic, and not so clear and thin like this one. The noodles were different too. I was used to noodles that have a heft and more of a bite when you eat them, but these were flat, very thin and more delicate. The beef also was already cooked, and I think that was the only style available here whereas I was used to phở restaurants serving a variety of proteins for the phở such as thinly shaved raw beef, cooked brisket, meatballs, tendon, tripe, etc... and you can mix and match and choose which ones for your own bowl. I was also surprised that there was no Thai basil served with the bean sprouts and the lime wedge. Instead, there was some cilantro, but usually that's already in the broth. And there was no hoisin sauce, no Sriracha sauce, no thick chili sauce and no fish sauce either. Instead, there were some pickled chili peppers in a brine of some kind and at this point I was shocked.
I can't say I enjoyed myself, because I didn't, but that's not the fault of the restaurant. This is not a debate of which type of phở is better either, north or south. And with the “Bamboo Tree” not only I found it but a very good one as well. The place is cosy as well as fancy, an atmosphere like open arms to welcome you. Will definitely come back to eat the rest on the menu. Friendly service and decent atmosphere. Couldn’t eat outside unfortunately since it’s summer here in Portugal but was nice overall.
Nice place to dine with family and friends, nice time and good food, great drinks too, if you like iced coffee, order the bâc ciu iced coffee.
