Vegashi Vegan Fusion — Restaurant in Upravna Enota Ljubljana

I had the most incredible experience at Vegashi on Saturday evening, just 30 minutes before they were about to close. Despite the late hour, the owner—who is also the chef—welcomed me with open arms. I had ordered a large amount of sushi, and instead of being frustrated with my late arrival, he took it as an opportunity to create something truly special.

What arrived at my table was not just sushi, but a work of art. The vegan sushi was not only the most delicious I've ever had, but it was also a feast for the eyes, with vibrant colors and beautiful presentation that could rival any high-end restaurant. Each bite was an explosion of flavor, fresh ingredients, and creativity.

To add to the experience, the waitstaff (who turned out to also be the co-owner) brought me a refreshing glass of elderflower juice. It was the perfect pairing to the sushi—light, fragrant, and just the right amount of sweetness.

By the end of the evening, I was left speechless. Not only did I get a sushi feast that surpassed my expectations, but one of the packages was even gifted to me for free as a kind gesture. Vegashi truly went above and beyond, making me feel like a valued guest, even at the very end of their workday.

I visited this restaurant with a friend, and while we were looking forward to trying their vegan offerings, the experience left much to be desired. Unfortunately, a number of the items we were excited to try were unavailable, which limited our options quite a bit. The dishes we ended up ordering, while presented well, lacked the bold flavors we were hoping for, making the meal less enjoyable.

On a positive note, the service was very good—our server was polite and attentive throughout the meal. During our stay in Ljubljana unfortunately the sun remained absent but all the wonderful colours in Vegashi’s dishes made us feel like summer wasn’t totally over yet. We had three dishes: a pokebowl with noodles and two kinds of sushi and it was all really tasty and delicious. The waitress (I think the owner) is super friendly and happily informed us about their dishes. She made sure we had everything we needed, and was so kind to pack our leftovers for us to take home, because our eyes were a bit bigger than our stomachs and we just couldn’t finish everything at once.
