We were just in Madrid for five days. Prior to going, I wanted to make some dinner reservations. My husband was dying to have paella, so I started looking for restaurants. At one point, I had read not to eat paella in Madrid as there are no good options as it is not traditional to the area. I kept looking and am happy I did. D'Stapa was perfect. To start, it is in a not-so-touristy part of Madrid compared to where we were staying, so the walk there was nice. The restaurant was clean, and the decor is charming. We started with a little complementary bite to eat, and then we ordered some croquettes to have while waiting for our paella. We had the classic Valencian paella. It was delicious! It also seemed to us to be very authentic. The seafood and seppia neri paellas at the next table looked great as well. And our server, Pedro, was wonderful! The standout dish was undoubtedly the paella—rich in flavor, perfectly cooked, and easily the best paella we had on this trip. Every bite was packed with fresh ingredients and that perfect balance of seasoning that makes a great paella truly memorable.

Read moreEvery time we come to Madrid from Dublin, we have to stop by D’stapa with my in-laws — it’s become a tradition we cherish. This time we indulged in their “paella del senyoret”, and as always, it was exceptional. Perfect socarrat, rich in flavor, and full of top-quality seafood.
To start, we had their torreznos and jamón croquettes, both absolutely delicious and cooked to perfection. And just when you think it can’t get any better, their cheesecake comes in to steal the show — it’s hands down the best way to end the meal.
What really sets D’stapa apart, beyond the outstanding food, is the warm and welcoming service. The staff always make us feel at home with their friendly and genuine attitude.
